With the increase of income and the development of technology,great changes have taken place in the consumption of fresh fruits and vegetables.Combined with the development of fruit and vegetable industry in various countries,it can be found that the fruit and vegetable processing industry is a powerful tool for regulating problems.However,the transformation and upgrading of China's fruit and vegetable processing lags behind.The layout planning,process design,technical equipment,standard formulation and management philosophy of the fruit and vegetable processing industry have not formed a scientific theoretical system,and the driving capacity is obviously insufficient.The design of processing process is the basic link of fruit and vegetable processing industry.Whether it is scientific or not will affect the product quality,and thus play a role in enterprise profitability and long-term development.In this paper,the fruit and vegetable processing center as the background,intended to discuss the status quo of the process of fruit and vegetable processing center,found that the existing process is not conducive to maintain fresh fruit and vegetable processing links,in order to solve the processing center product freshness is not high,low value-added rate or even loss of operating problems.This paper summarized the operation of fruit and vegetable processing and production logistics,analyzed the operation contents of each link,established a model based on the loss of freshness minimization,and found the problems in the processing center through the simulation software operation model,and put forward the process optimization plan,in order to improve the fruit and vegetable fresh status.The purpose of process optimization in the processing center is to reduce the loss of fresh fruits and vegetables in the whole processing logistics operation.Therefore,it is necessary to conduct literature research and field research in the processing center.Through literature research and field research,comprehensively analyze the entire operation from customer orders to the processing center,and determine the basic data such as process layout,process content,process connection,resource allocation and resource capacity.Secondly,a functional model based on freshness loss minimization is established.On the basis of the mechanism of deterioration,the theory of deterioration--T.T.T theory and Arrhenius equation,combined with the actual operation status of the machining center system,the objective function and constraint conditions were determined.Secondly,according to the basic data of process research,a visual machining center simulation model was built by using Flexsim to seek the optimal solution of the functional model.Equipment operation status,operating link output and freshness loss value were selected as the observed quantity to determine the process bottleneck.The optimization scheme is proposed for the bottleneck link,and then the scheme simulation is carried out to determine the effectiveness of the scheme.The thesis explore from the theoretical analysis to the problem,combined with the optimization scheme of simple,completed the process optimization based on measuring the degree of freshness machining center,the determination of the freshness of the fruits and vegetables in the process of real-time monitoring.The results show that :1)the reasonable allocation of resources and the coordination of different links are conducive to reducing the in-transit circulation time of fruits and vegetables in the processing center,ultimately reducing the loss of freshness and maintaining the quality of fruits and vegetables;2)time is the decisive factor to determine the freshness of fruits and vegetables.The effect of temperature,humidity and air composition is negligible,so to ensure the freshness and quality of fruits and vegetables,the first thing is to solve the problem of too long circulation time.So this model can complete daily fresh guidance processing center,reduce the loss of the machining operation cost,improve the quality of the products and customer satisfaction.
