With the development of social economy and the improvement of people's living standard,the quantity and quality of agricultural products have been greatly improved.However,the use of a large number of agricultural inputs,the overall level of the food industry,the government regulatory system is not perfect so that all kinds of factors superimposed on China's food safety problems occur frequently.In international trade,the technical barrier to agricultural products safety is increasing gradually,and the food safety risk has become the most potential hidden danger in the international trade of agricultural products.This paper is based on the food safety risk management theory,combined with good agricultural practices in the management of primary agricultural products cultivation(GAP),agricultural product traceability system(TBS),hazard analysis and critical control point(HACCP),food safety management system(ISO22000)and other requirements,theoretical research and production practice,methods with the qualitative analysis and the quantitative analysis,from the raw material base of risk management,transportation management,process management,storage management,identification,analysis,evaluation and monitoring,exchange of food safety risk in the whole process of project.It uses the fishbone diagram from the human,machine,material,method,ring of risk analysis,to establish risk factors and identify key risk control points.This paper is subject to HT food freezing project as an example,combined with food,agricultural products processing industry in our country,through the analysis of the risk factors of safety of fruit and vegetable processing process,from farm to shop with the entire processing chain of raw materials.It puts forward to the core of risk management,and risk control as the foundation,the key risk points throughout the fruit and vegetable processing chain project.In order to provide reference for the risk management and control of agricultural products processing in China,it promotes the progress of food safety,the development of agricultural processing industry,reduce the risk of export security.
