Research On Quality And Safety Risk Management Of Dairy Supply Chain Under Internet Of Things

As the demand for dairy products in China has gradually increased,its quality and safety issues have gradually received great attention.Since the 21 st century,the rapid development of dairy industry in China has also been accompanied by the frequent occurrence of quality and safety problems of dairy products in China.Since the Sanlu "poisonous milk powder"-melamine incident in 2008,the quality and safety problems of dairy products have received great attention from all walks of life.These events not only have a great impact on the domestic dairy industry and the import and export of dairy products,but also have made the dairy products in China.The image of the industry has had a huge negative impact on the international community.The dairy industry is a special cooperative organization composed of different independent enterprises.Its industrial chain is long and involves many industries.The dairy supply chain is a value chain that links the final consumers with the upstream and downstream enterprises(farms,dairy farmers,dairy stations,dairy processing enterprises,distributors,distributors,retailers)in the whole chain.Each link is closely linked.No matter which link has problems,it will have an impact on it.Dairy product quality and safety management is a systematic project.It is very important to identify,evaluate and control the possible risks in each link of dairy product quality and safety management.At present,domestic and foreign scholars have carried out a lot of research on supply chain risk,but there are relatively few studies on the quality and safety risk of dairy supply chain in China.n recent years,the development of Internet of Things technology and its application in dairy supply chain have overcome the shortcomings of traditional supply chain(such as information isolation,node decentralization,inadequate communication and traceability in all links),and reduced the possible risks,but also brought new risks.At present,the research on the quality and safety risk of dairy supply chain under the special environment of the Internet of Things is still in its infancy.Limited research is mostly qualitative,and there is little specific quantitative analysis.Based on the application of Internet of Things technology in dairy supply chain,this paper constructs the operation mode of dairy supply chain under the environment of Internet of Things,analyses the quality and safety risks of dairy supply chain based on Internet of Things technology,and divides these risks according to the three levels of Internet of Things(perception layer,network layer,application layer).Determine the probability of risk occurrence and risk impact value,analyze and evaluate the size of risk factors and rank them.The evaluation results show that the risks faced by the quality and safety of dairy supply chain under the environment of Internet of Things include R5(information security risk),R6(IT technology risk),R15(reputation risk),R7(network instability risk)and so on.The most critical risk is R5(information security risk).However,the traditional dairy supply chain risk R8(internal risk)and R9(external risk)rank behind,and have been effectively controlled and avoided.According to the evaluation results,the quality and safety early warning mechanism of dairy supply chain under the Internet of Things environment,the dairy industry reputation guarantee mechanism under the Internet of Things environment and the information security supervision mechanism of dairy supply chain are established.
