Dairy products are playing an increasingly significant part in the dietary life of Chinese residents,and the domestic dairy industry is in its golden period of development.However,the "melamine" incident in 2008 caused customer mistrust of domestic dairy products and led to a massive shock.In addition,the quality and safety problems of dairy products continue to appear in recent years,which makes it tough to revival.In this case,many scholars give different opinions and put forward a lot of feasible measures on how to remedy as soon as possible,which are of practical value.While,taking preventive measures and increasing pre-warnings,therefore,we could build up a system combining the pre-prevention and post-repair management approach,which is the general trend of adapting to the transformation of food safety issues and better boosting the dairy industry in China.Therefore,this article conducts dairy product quality risk assessment and early warning research from the perspective of the supply chain,hoping to be helpful to practice.This article is guided by the theory of supply chain management,food quality and safety management system theory,and food safety early warning theory.Firstly,the main supply chain models of China's dairy industry and the risk transmission mechanism between the main players of the supply chain are analyzed.The factors affecting the quality of dairy products are analyzed from the raw milk supply link,dairy processing link,and distribution and sales links,and then refined into milk supplyment,dairy processing,storage and transportation,and dairy sales,and extract 15 quantitative indicators from it,Weighting quantitative indicators with principal component analysis,and construct a comprehensive evaluation equation for dairy product quality and safety.According to the results,the indicators are divided into main indicators,general indicators and secondary indicators according to the weight.Important indicators include: dairy cow yield per unit,dairy cow scale breeding ratio,township drinking water sanitation compliance rate,annual imported alfalfa intake of dairy cows,fresh milk quality sampling inspection pass rate,concentration of dairy processing enterprises,and low-temperature liquid dairy production,HACCP certification rate,total dairy cold storage capacity,cold storage car ownership and consumer food safety information awarenessproportion;The main indicators are:feed sampling pass rate,per capita fresh milk consumption of urban residents and ratio of dairy products imports to national milk production capacity;The secondary indicator is the pass rate of dairy product sampling.Further,the trend analysis method was applied to 15 quantitative indicators to obtain the predicted values for 2018,2019 and 2020.And evaluate the risk level of dairy product quality and safety.According to the 5-level scale,the research shows that the comprehensive level of dairy product quality and safety in China has increased year by year,and it is at the basic level of safety in 2018 and 2019,and can reach the level of safety in 2020.Finally,using the possible influencing factors of current milk quality and safety problems reflected the risk assessment,then the measures to prevent dairy product quality and safety risks are proposed:Promote the standardization of dairy farming and ensure the quality and safety of milk sources;establish a reasonable benefit distribution mechanism between dairy enterprises and dairy farmers;improve the level of intelligent quality management,technological innovation and development of the dairy industry;improve cold chain logistics construction and encourage low-temperature milk production and promote the construction of the credit system of the dairy industry.This article conducts in-depth research on dairy product quality and safety.Discuss the risk transmission mechanism of the subjects in the dairy product supply chain.Special consideration is given to the physical and chemical properties of dairy products.Based on the indicators selected in the traditional production,processing and sales links,the relevant indicators of cold chain logistics are included,which will in turn enrich the existing dairy product quality and safety evaluation index system.Select the objective and rigorous method of empowerment,which is the principal component analysis method and truly reflect the key factors affecting the quality and safety of dairy products.It is helpful for reasonable risk assessment and scientific early warning of the quality and safety level of China's dairy products in the future.
