This article according to investigate nearly 60 projects,to find the problems in different stage of projects and to do the statistics,classification and recognition.According to set the food safety risk classification framework for liquid dairy project to analyze all the problems,consolidate all similar problem to the category of a risk.Through the summary of these questions,they can be classified into 34 kinds of risks,based on the principle of setting the food safety risk classification,finally summarizes the Tetra Pak liquid dairy projects food safety risk identification list.For identify the list of food safety risk list to do the qualitative analysis.Based on the probability of each risk point and after the project will produce the influence of the statistics,according to the set of risk classification rules for every point to evaluate the risk level.By scoring will finalize the risk level of each risk point,need to consider that the probability and the impact of the project must be to concern at the same time,a single index point is not to do the risk evaluation,so must to defined evaluation criteria.After classifying the risk points will as the managing and monitoring objects.Based on the identified after risk identification and risk assessment in the project of liquid dairy,based on the study of the risk point in the food safety risk matrix,the risks according to the level of risk to reorder.In view of the level of risk in the risk of medium and above detailed analysis,according to the characteristics of them to develop a detailed risk measures,to ensure that the project can in advance to have been in the process of implementation of risk identification and assessment of effective response,at the same time also on how to better to tracking monitoring of these risks,ensure the risk responses can be set by the effective implementation,after implementation of timely tracked were studied.This paper according to empirical analysis and theoretical analysis for liquid dairy project risk management,especially for food safety risk management study,to improve the management level of food safety risk.
