Nowadays,the competition in the domestic chain catering industry is becoming increasingly fierce.Coupled with the impact of various cross-border catering brands and take-out platforms,the market share of traditional catering chain enterprises is increasingly challenged.As a giant in the global chain of catering industry,Y’s business in China was jointly acquired by CITIC and Carlyle in early 2017,and a new M company was established.The new company has developed a strategy of “speed of light development” and plans to double the number of domestic stores in the next five years.Under the pressure of rapid growth in performance,the company requires all departments to make corresponding adjustments and changes to support the successful implementation of the strategy.The supply chain,one of the company’s key sectors,is no exception.If the supply chain wants to expand and upgrade,it will be inseparable from the expansion of existing suppliers and the introduction of new external suppliers.At present,M company’s supply chain system focuses on the management upgrade of bulk raw materials(such as chicken,beef,egg milk and potato),mainly because of their high volatility.However,there is a lack of effective analysis of seasoning products,the key raw material that accounts for a middle proportion of purchase amount and determines the product flavor,which to some extent forms a shortcoming in management and affects the overall performance of supply chain business.So this paper focused on M company’s seasoning product category as an example.Through decision tree analysis,it first determines the capacity expansion plan to introduce new local suppliers.To introduce new suppliers,it will inevitably involve supplier selection evaluation.Next,we will sort out the shortcomings of the existing supplier evaluation selection process and improve it.Then we will start with the supplier’s risk assessment and build the model and calculation method of the supplier’s risk assessment.With the data of risk assessment,which is introduced into the evaluation selection model of the new supplier constructed by fuzzy analytic hierarchy process,and comprehensive evaluation is carried out.For the evaluation of existing suppliers,for the sake of actual business considerations,we simplified the evaluation indicators and used the grey correlation model to give relevant judgments.Based on current situation that the lack of M company supply chain team in the quantitative method of capacity allocation,a capacity allocation model with cost operation method is constructed.Through the combing of the existing strategic objectives of M’s supply chain,a set of supplier evaluation selection models(including evaluations of existing suppliers)has been constructed.Finally,we conducted A case study on seasoning products and confirmed the improvement of supply chain business performance by the new model.1.By using the new model and evaluating the selection through more indicators and quantitative methods,it can be found that the comprehensive ability of C supplier is better.2.The new order-allocation mathematical planning model based on activity-based cost method is applied to evaluate the cost of single item,which can save an average of about 3.6% of the cost,and save about 3.25 million RMB for this item in the whole year.To sum up,the model constructed in this paper provides strong support for the supply chain department in evaluating and selecting suppliers in the future,and also supports the development of M company’s overall business.
