A curriculum for the newly diagnosed celiac based on the 2010 dietary guidelines and the USDA's Choose MyPlate model

Abstract/Summary:
The purpose of this project was to develop a curriculum for those who have been recently diagnosed with celiac disease. Specifically, this curriculum would help those in this population group establish healthy diets which are gluten free and compliant with the 2010 Dietary Guidelines by using the Choose MyPlate model.;This "Healthy and Gluten Free" curriculum was intended to be used in a class setting, such as in a healthcare outpatient facility or a support group seminar. The curriculum consisted of four classes. The four topics covered are: (a) Celiac Disease and Gluten Overview, (b) A Comprehensive Overview of the Gluten Free Diet, (c) The Choose MyPlate Model and the Gluten Free Diet, and (d) Barriers to Following the Gluten Free Diet and the Choose MyPlate model. This curriculum, the handouts, and evaluation tools have been reviewed by an expert committee.
