| The process of solid-state distillation in the production of baijiu is a unique technology in the world of distilled liquor.This distillation method can concentrate and purify the alcohol molecules in the fermented lees,and preserve the unique flavor substances in the baijiu.However,with the continuous development of industrialization in various industries,the scale of the baijiu industry has grown,and the traditional method of manual retort distillation can no longer meet the production status of modern baijiu enterprises with high production needs.With the rapid development of computer technology and electrical control technology,it is of great significance to improve the yield of base baijiu and the rate of high-quality baijiu and reduce the labor intensity of brewers,unify the technological standards during the distillation of lees if such technology is applied to the production process of the upper retort distillation of liquor.In this paper,an in-depth study is carried out on the current situation of the current baijiu distillation process on the retort,and the existing disadvantages and problems that cannot meet the large-scale production in the process are analyzed.In order to make the upper retort distillation process better meet the process requirements,the system uses computer technology and electrical control technology,and uses industrial Ethernet as a communication medium to enable the upper computer and the lower computer to exchange production data.A set of monitoring and control of liquor upper retort distillation is designed.For this monitoring system,this paper mainly carries out the following researches:Firstly,the process characteristics and requirements of baijiu distillation on retort were analyzed,and the two main process parameters,the steam pressure at the inlet and the condensed baijiu temperature,were analyzed in the production process.The PID control strategy of steam inlet pressure control and the fuzzy self-adaptive PID control strategy of condensed baijiu temperature are designed to ensure that the monitoring system can accurately control the steam intake pressure and the condensed baijiu temperature during the production process.So as to achieve a unified process standard,improve the production of base baijiu and the purpose of high-quality baijiu rate.Secondly,the self-tuning fuzzy PID controller based on fuzzy theory is designed with emphasis.The simulation fuzzy platform selected in the experiment is built on the basis of MATLAB software,and the PID simulation module and the fuzzy PID simulation module are built in the Simulink toolbox respectively,and the simulation and comparison of the two are carried out respectively.According to the simulation curve,compared with the PID control algorithm,the fuzzy PID control algorithm based on self-tuning adopted in this paper has the advantages of fast response speed,high control accuracy,small system overshoot range and strong robustness.The fuzzy PID control algorithm can make the system reach the equilibrium state in a shorter time,which proves the feasibility and effectiveness of the control method.Finally,using Siemens Wincc configuration software as the platform,the system host computer monitoring software is developed which integrates process control,status display,fault alarm and other functions.The PLC software design is carried out with TIA PORTAL V15.1 software as the platform,and the hardware configuration of the monitoring system is completed.The designed monitoring system is installed and debugged on site.In the actual production process,it is proved that the monitoring system can run stably and meet the monitoring requirements of baijiu distillation production. |
