Selenium(Se)is an essential trace element for human and animal bodies,and the effect of different selenium compounds applied varies.In order to investigate the effect of different selenium sources on pork meat products,a univariate test design was used in this study,in which different selenium compounds(sodium selenite / yeast selenium)were added to the diet,and the effect was evaluated on the min pig crossbred pigs(white × duroc × Min pigs)about their meat quality,selenoprotein levels,amino acid content as well as mineral content of the longissimus.Dorsi muscle in the lumbar region are recommended to investigate the role played by adiponectin signaling pathway,in combination with the detection of antioxidant function and myofiber type IV gene.The mean weight at selection was 23.3 ± 5 kg,14 Min pig crossbred pig s were randomly divided into two groups,the test group was supplemented with 0.5 mg / kg ye ast selenium(organic Se group),the control group was supplemented with sodium selenite at 0.5 mg / kg(inorganic Se group),and each group was divided into three replicates on average.Three heads from each of the organic Se treated and inorganic Se treated groups were randomly slaughtered,muscle tissues were collected,and indexes such as meat quality were analyzed.The results were as follows:(1)Muscle drip loss was lower in the organic Se added group compared to inorganic Se;There were no statistically significant differences between the two groups in the amount of flesh red,flesh yellow and loss by steaming;In terms of brightness,the organic Se group was significantly brighter than the inorganic Se added group.(2)Compared with inorganic Se,mRNA levels of GPX3,Txnrd1,Dio2,Dio3 were higher in the group with organic Se supplementation.There was a trend towards lower SEPX1 and SPS2 in the organic Se group,however,a statistical difference did not emerge.(3)Compared with inorganic Se,the content of partial umami amino acids was significantly higher in the organic Se group;Among them,the organic Se group had more amino acids in total than the inorganic Se group.(4)Compared with inorganic Se,the organic Se group contained significantly m ore sodium,potassium,magnesium,iron,and zinc than the inorganic Se group;Manganese and selenium are found at extremely low levels in muscle;However,there was a trend towards higher levels in the organic Se group,which did not show a significant difference.(5)Compared with inorganic Se,the organic selenium group had higher GSH and GSH-Px activities;SOD and CAT did not exhibit obvious differences.(6)The mRNA and protein levels of key genes of adiponectin signaling pathway,A dipo Q,AdipoR,AMPK,PGC-1 α,were all increased in the organic Se group compared with the inorganic Se group;the expression of MyHC1,MyHC2 a genes was increased in the organic Se group compared with the inorganic Se group;however,the mRNA change of MyHC2 b gene in the organic Se group was 80 % of that in the inorganic Se group;and the mRNA change of MyHC2 x did not show significant difference.The addition of different selenium sources to diet showed different effects on meat quality in min pig crossbred pigs.Compared with inorganic Se,the addition of organic Se to diet had an improving effect on muscle quality.Organic Se treated muscles had increased levels of selenoproteins,amino acids as well as mineral elements.Organic Se had an enhancing effect on adiponectin pathway involved in muscle fiber alterations and also an improving effect on meat quality.
