The Chinese agricultural sector has entered into a new development stage. The supply of agricultural products can basically meet the demand. With the rise of the income, Engel efficiency decreases continuously and food safety has become one of the key concerns in the consumption of agricultural products in China at large. The main development tendency in its pork processing sector in a long period of time in the future lies in the supply of the high value added and safe products to marketplace. With China's being a member of the World Trade Organization, the agricultural market will gradually be integrated with the world market. In current international market, the grain, edible oil, cotton and sugar products of China have comparative disadvantage with obvious higher production cost compared with the international market prices. However, the labor-intensive products, such as eggs, fruits and vegetables and aquatic products, enjoy a large comparative advantage on prices. At the same time, the pork production and processing capacity in China is in the leading position in the world. Among more than 2000 processing enterprises of pork meat, there are over 200 large and medium companies. They possess a total amount of 3 million tons of cold storage warehouse or facilities with sales network around China. With the strong promotion of the Chinese government on "licensed pig slaughterhouse policy", some processing enterprises with advanced equipment are now in the list of government support. The sector admission standard for pig slaughter business is stricter than ever before. With the rapid development of pollution-free agricultural products in global market, some developed countries, such as Japan, USA and European countries, set up higher standards for the inspection or tests of imported agricultural products to prevent the invasion of agricultural products from China. This posed a new challenge to those Chinese agricultural products participating in the international competition. Therefore, how to strengthen the competitiveness of the Chinese agricultural products appears to be very important nowadays.For this purpose, a systematic study on Chinese pork processing sector from the supply chain management (SCM) perspective is carried out within this paper. It put forward the following SCM model for pork sector: to link the breeding, slaughtering,frozen, processing, chilled storage and transportation, wholesale and distribution, retail and other related service activities and make them into an effective SCM model. It begins with the demand of the customers and integrates the capital, logistics and information of the supply chain. Eventually this will provide an effective decision-making bases for the quality assurance, food safety and customer satisfaction of the processed pork products and improve the standardization of pork production in China, stimulate the effective supply of pork products, reduce the production cost and strengthen the international competition edge of the pork processing sector in China.The selection of pork meat as the object of practical study is based on the fact that pork meat and processed pork products are of great importance to people's livelihood and the supply chain is relatively long and complete. Through the value-adding activities in the processing stage, the supply chain benefit is achieved. Furthermore, it is relatively easy to control the pig breeding and processing processes. And there already have had many standards for pork sector and it is convenient to implement a standardlised management.With regard to the selection of Jiangsu province as the location for practical study, it is because that the pig breeding bases and leading processing industries have achieved a scaled development. The well-developed marketing network is helpful to the data collection. Another consideration is the difficulty of conducting an overall and systematic survey on the industries under the market economy.
