There is about 14%-17% oil in the grape seed, and the chief ingredient of the oil is the linoleic acid, whose content is as high as 68%-76%. The grape seed oil it can not only prevent the thrombus, expand the blood vessel and eliminate the sediment of blood cholesterin, but also nourish the brain cells, adjust the plant nerve, resist senescence and prolong life. The oil is widely used in the industries of medicine, health care, hairdressing and cosmetic.In our country, however, the utilizing rate of the grape seed is very low. It is rarely reported about the research on the extraction of fermented grape seed oil and other ingredients. In the grape wine factories, most of the fermented grape seeds are dropped on the roadside as rubbish, which is not only wasteful of resource, but also pollution to the environment. So, this paper gets the health caring oil by low-temperature extraction from the fermented and abandoned grape seeds. With this method, the decomposition of unsaturated fatty acid, the oxidation of linoleic acid and the breakage of the polyphenol nourishment are reduced. The extracted oil can be directly used in medicine, health care and hairdressing. The material in this research is cheap and easy to get. This is the effectively using of rubbish. There is great significance in protecting environment, developing the new high-quality oil resource and releasing the intense situation of the lack of oil in our country.This paper chiefly studied the extracting technology of the fermented grape seed oil, by doing experiment, we investigated a series of influenced factors, such as solvent sorts, extracting time, temperature, ratio of material and solvent, grinding time, water content, fermented effect and grape kind, etc. and we compared several different extraction mode. At last, the optimized condition is the Soxhlet extraction, using the hexane as the solvent, extracting time 120 minutes, temperature 80℃, the ratio of material and solvent (g:mL) 1:10, no grinding after crashed, water content 8.5%.Then, we determined and analyzed the four most important indexes of the extracted oil-acid value, peroxide value, saponification value and iodine value, and by doing this, we could know how the extracting condition affected these indexes and oil quality. In the analyzing process, we improved the national standard methods, and the effect was better, time saving and accurate. The result is that the AV under 2, fluctuating at 1.5, the SV between 185-195, the IV between 132-142, the POV under 2.5, fluctuating at 2. The POV is far less than the national standard of the high quality health caring oil, which is less than 5.Then we chose appropriate technology to refine the grape seed crude oil. After the centrifugal sedimentation, hydrated deglue, alkali deacidification, decolor and deodorizing in the argil, we got the good refined grape seed oil, all the indexes were accord with the national standard. And by extracting oil from the fermented and unfermented grape seeds, we found that the ferment didn't apparently affect the indexes, except the POV is a little higher. So, the fermented seeds have the same value as the unfermented seeds!...
