Due to dead animal meat, icterus meat, trichinosis meat, sow&.boar meat, affusion meat encountered in eatable security, the review bringed forward methods and regulations about sense and biochemical detection. Using cupric sulphate infusion precipitation, cupric sulphate broth, pH and peroxidase reaction tests to examine 52 samples of diseased pork and 60 samples of diseased chicken meat and 450 samples of fresh pork and 300 samples of fresh chicken meat. The results showed that there were insignificant difference between two cupric sulphate precipitation tests (P>0.05). Either of them could be chosen in the paractical application. Tests of cupric sulphate broth and peroxidase were fast, convenient and accuracy. In practice, choosing cupric sulphate infusion precipitation test and peroxidase test cooperation with sensory inspection can be raised their sensitivity and accuracy. Using NaOH-aether tests to distinguish whether 42 samples of yellow fat meat were icterus meat. The results showed that the method of NaOH-aether tests to detection icterus meat had accorded with the sense. That was accuracy and jarless. Comparation the method ELISA and using microscope, from 1343 samples of pork, whether it was blood or meat. The method of ELISA had higher sensitivity, the positive rate of blood sample was 9.28%, nearly with the method of ELISA (p>0.05). The positive rate of ELISA was higher than using microscope (p<0.05). Using ELISA to detect blood samples was as same as using microscope (22/22). Using ELISA to detect meat samples was 95.4% similarity with using microscope. The method of ELISA had virtue of sensibility, distinctive, easy, quickly. Sow and boar detection from sense was distinctive from 100 samples. We detected 450 porks, the results showed that 48.89% porks were not affusion meat, the character of affusion meat was in evidence, the low affusion meat was about 41.11%, the higher affusion meat wasabout 10%. We can estimate the sow &.boar meat and affusion meat from sense. We have finded that we should be based on sense in animal production quarantine, these tests were good for spread and using, which of cupric sulphate broth and peroxidase detection dead animal meat , NaOH-aether detection icterus meat, ELISA detection trichinosis meat.
