Agaricus bisporus is a mushroom whose cultivated scale,total production and production of unit cultivated area is the largest in the world.China is a large country on the cultivated scale of Agaricus bisporus.And the cultivated technique of Agaricus bisporus is drop behind. The traditional planting method, that is solid spawn planting method,is long cycle,low efficiency.According to the trait,we have done researches on Agaricus bisporus liquid spawn. Although there are many researchers on fungi liquid spawn, yet there are few who studied on Agaricus bisporus liquid spawn. Aming at this fact, the technics of edible fungi liquid spawn is researched in this subject.The main research output is following:1 .The optimal fermentation conditions were worked out through single factor test. The optimum fermentation culture and fermentation conditions of dry weight and EPS produced by Agaricus bisporus 2796 strain were obtained. The experiments show that cornstarch ,soybean cake are the optimum carbon and nitrogen sources. K2HPO4, MgSO4·7H2O, NaCl and CaCl2 are inorganic salt. The optimum fermentation conditions are initial pH 6.5, 200r/min, 10% of inoculation volume, fermentation temperature 25°C, 100mL liquid medium per 250mL flask and seed age 7d.2.By using Plackett-Burman design by SAS software, major components who affect dry weight of Agaricus bisporus in liquid fermentation were chosen. Cornstarch ,soybean cake and MgSO4·H2O were chosen as the major components from eight variables who are fermentation temperature , initial pH, Cornstarch ,soybean cake, K2HPO4, MgSO4·7H2O NaCl and CaCl2. A regression model equation was obtained after Response Surface Analysis(RSA) performed, which is:Y=2.47-0.16875X1+0.0825X2+0.10625X3-0.25125X12+0.03X1X2-0.0225X1X3-0.10875X22-0.075X2X3-0.21625X32The optimum concentrations of cornstarch, soybean cake and MgSO4·7H2O were predicted to be 31.70g/L, 11.29g/L and 3.44g/L, respectively, for the maximum dry weight, which is 2.52g/100mL.The model was validated experimentally by the maximum production of 2.54g/mL.
