Pleurotus eiorinopi eutas is called Pleurotus citrinopileutus in china, and is famous wild domestic fungus in northeastern region of china. It has high nutritional value and healthy role. Recently, the price of Pleurotus eiorinopi eutas continue to rise with the increasing of demand. Now we can obtain its sporophore through the artificial cultivation, but it is a long life time cycle and need high costs. Particularly,the cost would become higher when the compositions which had curative and healthy function were extracted from sporophore,so the deep development of Pleurotus eiorinopi eutas was restricted. During the short time,a large number of mycelium and fermentable products could be obtain using the submerged fermentable technology of domestic fungus. The experiment results showed: the content of polysaccharide, protein, and amino acid in these fermentable products were exceeded the sporophore or similar. So the using of the active ingredient extracted from the functional food and pharmaceutical industries will reduce costs greatly and expand the scope applied of the domestic fungus.Pleurotus eiorinopi eutas was the main research object in this study. The experiment studied the submerged fermentable technology of Pleurotus eiorinopi eutas, including the selection of the liquid medium, the optimum parameters and fermentation dynamics during fermentation. The conclusion is as follows:(1) The optimum medium formula of incubation was determined by single factor and orthogonal test: potato 20%, glucose 1%, sucrose 1%, yeast extract 0.15%, peptone 0.15%, NaCl 0.01%, potassium dehydrogenate phosphate 0.15%, magnesium sulfate0.075%, VB1 0.001%. The optimization medium formula of extracellular polysaccharose was determined: potato 20%, glucose 1.5%, sucrose 1.5%, yeast extract 0.1%, peptone 0.1%, NaCl 0.03%, potassium dehydrogenate phosphate 0.15%, magnesium sulfate0.075%, VB1 0.001%.(2) The optimum liquid medium formula of Pleurotus eiorinopi eutas in shake flask was determined: 200ml liquid medium was added in 500ml shake flask; pH value of primary medium was 6.0, rotary speed 160r/min, temperature 27℃, culture time of secondary strain 7d, the Pleurotus eiorinopi eutas could suit to the condition by experiment, the amount of mycelia was up to 29.3g/100ml. 20L liquid culture was added in 50L fermentation tank, inoculation time 7d, inoculum 10%, temperature 27℃, pH6.0, rotary speed 160r/min, air amount 1.2m3/h, pressure of tank 0.04MPa, fermentation time 6d.(3)Fermentation dynamic during submerged fermentation of Pleurotus eiorinopi eutas was primarily studied in this paper.Through the liquid submerged fermentation experiment of Pleurotus eiorinopi eutas, the strain state, the color of fermentation liquid were observed and the changes of fermentation parameters were determined. The fermentation dynamic curve of Pleurotus eiorinopi eutas during fermentation was obtained.
