Pleurotus eryngii is a large group of fleshy fungi which grows on alpine, grassland and desert of Southern Europe, Northern Africa and Central Asia. It is a kind of rare edible fungi used for medicine and food with a crumbly texture, amygdaline fragrance and pleasing taste. Pleurotus eryngii is nutritious and balanced healthy food with high protein, low fat and 18 amino acids. It can promote digestion and absorption of lipids and dissolution of cholesterol, and prevent tumour. It has a group of enzymes, some of which can promote the excretion of urine, and some of which are good for taste and acid digestion. It also has function of keeping fit and strengthening immune.This experiment is studied on Pleurotus eryngii breeding by ion beam implantation for the first time. N+ ion beam implanted Pleurotus eryngii mycelia were cultivated under high temperature. A high temperature tolerance strain was selected. The fermentation medium and some other factors of strains X0720 and XCK were optimized, and the optimum fermentation medium and cultivating condition were obtained. The three extracellular enzymes activity of the different mutant strains were measured.
