Safety, sanitary & quality management on aquatic products destined for export should be directly faced with the increasingly stringent technical barriers from abroad and the persistent increase of export outputs."Risk Analysis" theory has been consistently applied and developed in aspects of animal-and-vegetable derived foods safety control during recent 20 years. The CAC standards, set up on a basis of Risk Analysis, have evolved from a recommendable into an internationally widely acceptable and generally applicable food safety management measures, and somewhat become compulsory standards in international trades.To ensure of exported aquatic products safety, this context apply "Risk Analysis" theory to conduct risk analysis for major exported aquatic products in Shandong areas. On such basis, the risk degrees of various products are fixed and the inspection & monitoring models for different products are established to make the focal point of inspection & quarantine inclined to high-risk products. In addition, based on the results of risk analysis, the controls over high-risk products are extended to aquaculture period, and the management shall cover the full ranges from aquaculture till processing, to ensure of food safety for exported aquatic products and to further enlarge exports.Risk Analysis includes: -To set up a product classification coding system, in combination with biological taxonomy, to facilitate risk analysis;To conduct Hazards identification, Hazards description, Exposure evaluation & Risk description for various products to draw out the final of qualitative results forrisk evaluation;To make Risk Evaluation Schedule for various products;To make General Risk Index Chart.The risk evaluation results indicate that Risk Index of exported shellfish products is the highest, the Risk Index of fine and deep processed products is comparatively higher, such as Frozen Cooked Eel fillets, Frozen salted Mackerel fillets & Dried Squid slices etc., and the Risk Index of single frozen fish fillets is low.On a basis of Risk Analysis, we put forward the ideology for Risk management & Risk communication.
