Research On The Issue Of Information Asymmetry In Food Safety

"Bread is the staff of life, security is the first for bread", Food safety is a major issue related to people's livelihood. In recent years,domestic and foreign food quality and safety of major accidents occurred one after another, not only seriously jeopardize the health of consumers, causing serious economic losses, but also in the international community led to an unprecedented crisis of food security. Food production, chemical processing, biotechnology, additives, improper use of hazardous substances; economic and trade globalization of the food supply situation and extend the chain; food safety, quality and trust properties are difficult to identify the consumers to make an accurate assessment of food safety ; government control of factors like lack of food safety incidents occur frequently. Although the state is taking a series of measures to control food safety problems, but involving producers, consumers, operators and government entities such as large, the relationship between the various entities of complex and difficult to fully communicate with all kinds of information, leading to of information asymmetry, the food security situation is not optimistic.This paper gives a comprehensive description on the concepts of food, food safety , asymmetric information and the historical process of food safety, content, features, and focus on the analysis of asymmetric 0f information theory.Based on the theory of information asymmetry, this paper explains the specific performance of asymmetry information on food safety between the food features itself , producers and consumers,the ink of food production and circulation, the management departments of government and the producers and suprevisors, analyzes the reasons causing this problem and the effects caused by the information asymmetry. All the harmful consequence made it more difficult to safeguard the food safety.Finally, through the analysis, we obtained that it is a complicated and long-term process to solve the problem of asymmetry information on food safety completely,we can take measures to reduce the incidents in food security, provide health protection for people's living by improving the ability of consumers to obtain information,strengthening theconstruction of organizationon production,standardizing the behavior of the economic entities in circulation and enhancing the functions of government to minimize the asymmetry.?...
