Electrical field have been used in change of plant biological characteristic extensively as a kind of physics factor which could produce beneficial biological effect to plant.In recent years,Electrical field treatment got break progression in the research of advance germination rate,germination vigor of seeds,improve growth status of seedlings and enhancement resist adversity of plant at home and abroad.But,it is less to study the effect of electrical field pretreatment of soybeans on biological ingredients content of soybean sprouts.The effect of electrical field pretreatment of soybeans on biological ingredients content of soybean sprouts was studied in this article by determining the content of ant scorbutic acid,soluble protein and total flavanone in soybean during germination, which has got beneficial result.This study could provide experimental data for the extensive use of electrical field pretreatment technique,which has important used value.In this experiment,seven groups soybeans were pretreated with high-voltage electrostatic field that were fromlto7kV/cm for 15min and were named E1,E2,E3,E4,E5,E6 and E7 respectively. All of the soybeans were germinated conventionality.The effects of high-voltage electrostatic field pretreatment of soybean on biological ingredient of soybean sprouts by determining the content of ant scorbutic acid,soluble protein and total flavanone in soybean during germination every 24h in 5 days.The soybeans also were pretreated with 2,4,6kV/cm for 5,15,30min respectively and were named T21,T22,T23,T41,T42,T43,T61,T62and T63respectively.The soybeans were germinated under the same condition.The effects of high-voltage electrostatic field pretreatment time of soybean on biological ingredient of soybean sprouts by determining the content of ant scorbutic acid, soluble protein and total fiavanone in soybean during germination.The result showed that there were bigger effects to biological ingredients content of soybean sprouts after soybeans were pretreated with high-voltage electrostatic field.When the treatment time was constant,all of the content of the three biological ingredients were increased first and declined later as the intensities were strengthened.In E4 the range of contents of ant scorbutic acid was biggest,the ranges of content of soluble protein and total flavanone were biggest in E3.The ranges of three biological ingredients contents were achieve biggest value in the fourth day,and were increased 35.87%,6.57%and 41.89%respectively.In the group of E7,the content of three biological ingredients contents was lower than the control.The result also showed that when the times of electrostatic field pretreatment of soybeans were different and the intensities of electrostatic field were 2kV/cm,the increase ranges of contents of three biological ingredients were T21<T22<T23,but when the intensity were 4kV/cm and 6kV/cm,the increase range of contents of ant scorbutic acid and total flavanone were T42>T41>T43 and T62>T61>T63 and the soluble protein was T41>T42>T43 and T61>T62>T63.So,Different processes and conditions have different biological effect on different biological ingredient.It can be concluded the best effect was obtained when the intensity of electric field is from 3kV/cm to 5kV/cm and the process time is about 15 minutes by analyzing the results of experiment.The research of task showed that electric field pretreatment of soybean could improve the content of vitamin C,soluble protein and total flavanone in soybean during germination.The increase of content of vitamin C showed electric field pretreatment of soybean could enhance the ability of antioxidant and edible qualities of soybean sprouts.The increase of content of soluble protein showed electric field pretreatment of soybean was good for the absorbability of body to protein of soybean sprouts.The increase of content of total flavanone showed electric field pretreatment of soybean could enhance the physiological activity.This study not only provided scientific gist and experimental method for increasing beneficial biological ingredient of soybean sprout,but also it has important significance for the use of electric field treatment in vegetable produce and the research of biological mechanism.
