In recent years, the application of high voltage electrostatic technology has been graduallysprung up.The high voltage electrostatic field has some advantage to carry out the fruitpreservation,which has simple equipment, non-polluting, low energy consumption andgood preservation effect and also has provides a new train of thought for the Storage andPreservation of fruit and vegetable.This article is to explore the storage effect on JinkuiKiwifruit Which has been treated by high voltage electrostatic field.In my article themethod of high voltage electrostatic field treatment on fresh Kiwifruit is to use the twoparallel electrode plates and by the step-up transformer to generate a high DC voltage toform a high voltage electrostatic field.Kiwifruit placed in between the plates to process inrespectively by pressure of50kv,60kv,75kv, duration of action for6h,9h,12h,then todetermine fruit flesh firmness, weightlessness rate, soluble solids content, ethylene releaserate and amylase activity freshness indicators of kiwifruit and to evaluate its preservationeffect.The conclusion is that good storage indicators of kiwifruit is maintained by in thepressure of75kv, processing time12h. In this conditions the kiwifruit can be effectivelyachieved the desired preservation effect by the high voltage electrostatic field,for examplethe high voltage electrostatic field can maintain the hardness, inhibition of metabolism ofKiwifruit and make the freshness indicators be controlled purpose to extend the storageperiod.The preservation of high voltage electrostatic field in food processing have beensome research, but it is still in the experimental stage in terms of fresh fruit.Some scholarshave researched the respiration on peaches, tomatoes and pears typically, but no summaryand systematic reports about preservation mechanism of the high voltage electrostaticfield.In this paper, take kiwifruit as an example to discuss the mechanism of high voltageelectrostatic field, so that there is new technologies conducive to promoting thepreservation of high voltage electrostatic field for further development.
