China's "employees shortage problem" is getting worse, and the respect and the survival conditions need to pay more attention, as an important services department, restaurant should pay more attention on it. Vitality of an enterprise lies not only in his brand and the market, but in his employees, the restaurant which is more depend on personnel, is even more speaking so. The service level of the restaurant is more attached to professional skills and working attitude of employees. But the life cycle of domestic restaurant of small and medium size is not very long, a large reason is that the staff loyalty is not high, or staffs loss. The author has engaged in medium-sized hotel more than one year and has business experience, combining daily running and pondering and discussion with other operators, and then decided to probe into the industry management problems.Based on the study of a large number of literatures about the restaurant staff loyalty both domestic and abroad, and then summed up in six aspects which influence loyalty: self consistency with the contract, realize degrees of contract, professional extension degrees of career, growth of job, approval of management and the process fair degrees. From these aspects and combine basic situation of individual and analyze the influence on employee loyalty, and made the conclusion which will help managers to pay more attention on critical events, improve staff loyalty, improve efficient management level.This paper summaried three dimensions of the restaurant staff loyalty, respectively is attitude loyalty, approval of role behavior loyalty, in this research, We not only know the overall influence on employee loyalty, but also provides the reality of the situation for the three dimensions of loyalty. Through the analysis of dimensions of restaurant staff loyalty and the antecedent, and the and mutual influence of each other, we conclude that a few demography variables, for example sex,birth place, age, job level, working years have important implications on employees' loyalty. In comparation, the factors of self fit, degree of contracts realization, profession extension degrees are important relatively to the influence of employee loyalty; it also reminds us that in management reality we should attach great importance to the content when maintaining a high level of employee loyalty.
