Nowadays, HACCP has been widely used in the food industry,its action is alsomore and more remarkable. In this paper, the garlic stem were stored by usingdifferent ways: common cold storage, MA pull port storage and the modifiedatmosphere storage (MA). Some physiological and quality indices were determinedand researched during the storage period. At the same time, the time course of garlicstem with blot purse and cutting blot purse was detected by using texture profileanalysis during MA. In the study, the potential hazard factors were investigated andidentified the critical control points in garlic stem storage, HACCP control table wasmade to improve the quality and safety in garlic stem storage, to provide quicker andmore convenient control measures for garlic stem storage. The results as follows:Firstly, the garlic stems were stored in the MAP. Some physiological and qualityindices were determined during the storage period. The results showed that MAPstorage signally extended the shelf life, the nutrient of garlic stem lost less, the degreeof fibrosis was lower than other storage garlic stem, sensory quality and texture weresatisfactory.Secondly, during garlic stem with cutting blot-purse MA storage, the textureparameters of the overall downward trend. However, the texture parameters of garlicstem cutting blot-purse were always higher than retaining blot-purse. It indicatedthat cutting blot-purse could effectively maintain the textural quality of the garlicstem.Finally, through to the hazard analysis, it confirmed5CCPs: the timely harvest andquality control, purchasing transportation, selecting and processing, pre-cooling thegarlic stem, storage management and the depot sterilization and pre-cooling.According to it, develop appropriate critical limits and control measures, at finally, thedevelopment of HACCP worksheet, provide a reference for the research andproduction of garlic stem preservation techniques.
