The project was based on the pig breeding integrated system of LuoNiuShan company, depended on the rules of GB 18406.3-2001 (Safety qualification for agricultural product) to the safety requirements for non-environmental pollution meat. We applied the principles that HACCP system can prevent food safety and control products quality to establish the swine production HACCP management system of Haikou Agriculture Industry Trade (LuoNiuShan) Stock Limited Company. Based on the processing characteristic of swine production of the company, we divided the whole production system into two independent but still related system: the pig production system and the feed processing system. By analyzing the potential biologic, chemical and physical hazard factors in processing, we confirm the CCPs of breeding pig and commercial pig production: CCP1 is the epidemic disease controlling measure during introducing breeding pigs; the controlling of water sanitation index is confirmed CCP2; the sanitation index in feed and controlling of inhibitive medicine are confirmed CCP3; the epidemic prevention and controlling of therapy medicine are confirmed CCP4. CCPs in feed processing system were: controlling of chemical hazard during ingredient receiving system is the CCP1; controlling of chemical hazard is the CCP2.Based on some rules of laws and management operating rules of Haikou Agriculture Industry Trade (LuoNiuShan) Stock Limited Company, we established possible prevention measures and the critical limits and set up the measures of monitoring and correcting and founded the procedures of HACCP validating and recording; furthermore, we studied the running model of HACCP system in Haikou Agriculture Industry Trade ( LuoNiuShan) Stock Limited Company to produce the non-environmental pollution meat.This study will provide theoretical and technique ensuring for safety pig meat production and provide theoretical and practical basis for pushing the use of HACCP system on the non-environmental pollution meat production in Hainan province and the country.
