Hazard Analysis and Critical Control Point (HACCP) was made of hazard analysis and critical control point in quality broiler. HACCP can identify all kinds of hazard and have preventive methods which can control these hazards occurring in the manufacture process in quality broiler. HACCP was not zero risk system and can make the risks of all kinds of hazards reduced to the lowest limitation. HACCP was the manage tool which can avoid biological, chemical and physical hazard in the manufacture process in quality broiler. The corporation of quality broiler manufacture can get better effect and the quality of product can get safety level based on the implement sanitation operation program during implement HACCP system. HACCP was a preventive quality control system and can put in practice and need not big investment. HACCP was simple and effective and was accord with the situation in China.The aims of study are on the environment pollutions, territorial sudden disease ceaselessly brought by high density breeding in the process of broiler production. The veterinary medicines which was short of normal supervise manage system and procedure brought about the severity phenomena of drug residues in chicken product and problem of having no products quality safety.The fourteen manufacture tache of hazard were analyzed in the process of quality chicken according to seven principle of HACCP manage system in the process of quality chicken. Four critical control points (CCP's) such as breed, water, feed and veterinary medicines were conformed according to CCP decision tree. the key limit value and control measure were made. HACCP manage system in quality chicken were made in the end.The " standard sanitation operation program (SSOP) in quality chicken process" and other related regulation and criterion were made and implemented in corrperation in the study of validation and application of HACCP manage system. HACCP manage system was implemented and validated in breeding center of Jiangsu poutry institute and two chicken houses of Changzhou Lihua livestock and poutry limited liability corrperation. Furthermore, the product quality safty of three chicken houses were in order and reached technological request of product criterion of NY 5034-2005(non-pollution foods, poutry meat and birds byproduct) and GB 18406.3-2001 (safety request of non-pollution livestock and birds meat).The concentration breeding, all in all out, feeding in canopy, grain feed breeding in all the feeding process and zoology breeding technology were improved and extended according to standardization process, dimensions working need and requirement of food safety in the market which was applied integrated with HACCP manage system.It will be in favor of resolving product quality safety in quality chicken at present after the study on the establishing and application of HACCP manage system. It will have extensive application foreground in providing high quality, safety and sanitary poultry product for consumer.
