In this paper, regard the Medicago sativa L. as test material, study on the effect of cutting period and silage methods quality of alfalfa silage. Gold Empress were cut at budding stage, through different drying time(fresh sample, wilt 10 h) and adding different concentration of lactic acid bacteria(0, 3, 6, 9 mg/kg), cellulose enzyme(0, 25, 50, 100 mg/kg), lactic acid bacteria + cellulose enzyme(0, 3+25, 6+50, 9 +100 mg/kg), determine the pH value, water soluble carbohydrate, ammonia nitrogen and nutrient component. The results showed that:(1)In the three varieties, crude protein, crude ash and relative feed value(RFV) contents of Gold empress were the highest, reached 16.86%DM, 7.97%DM, 106.22%DM, respectively. Neutral detergent fiber(NDF) and acid detergent fiber(ADF) contents of Gold empress were the lowest, reached 51.08%DM, 41.04%DM, respectively. Crude protein, crude ash and RFV contents were the highest, reached 18.99%DM, 9.07%DM, 127.15%DM, NDF and ADF contents the lowest, reached 44.98%DM, 35.78%DM, at budding stage. Crude protein and RFV at budding stage significant(P<0.05)higher early blooming, full booming, pod-setting stage and maturing stage; In leaves and stem, compared withthe latter, crude protein increased by 4.52%, 8.28%, 12.06%, 14.70% and 12.59%, 9.38%, 11.19%, 28.18%;compared with the latter, RFV increased by 6.55%, 6.60%, 29.07%, 40.25% and 3.84%, 6.09%, 4.88%, 10.99%;compared with the latter, crude fiber decreased by 7.46%, 6.85%, 20.46%, 23.00% and 2.99%, 1.82%, 2.67%, 3.67%. In summary, yield and nutritional value of Gold empress were highest, making it best quality. Budding stage was the best stage of cutting period.(2) Low water content treatment of sensory score higher than the high water content, the performance of fragrance and color was hazel. Treatment of low water content, crude protein, crude fat, RFV and water soluble carbohydrate content is higher than that of high water content, crude protein content highest at the lactic acidbacteria(6 mg/kg), cellulose enzyme(50 mg/kg), lactic acidbacteria + cellulose enzyme(6 + 50 mg/kg) concentration, crude fat, RFV and t water soluble carbohydrate content highest at the lactic acid bacteria + cellulose enzyme(6 + 50 mg/kg) concentration; In the low water content treatment, crude fiber, NDF, ADF, pH value and ammonia nitrogen ratio value is lower than the high water content treatment, concentration of lactic acid bacteria + cellulose enzyme(6 + 50 mg/kg) at lowest. It showed that, lower water content can reduce the pH value, ammonia nitrogen and the total nitrogen ratio, suppressing harmful microorganisms, increase the number of lactic acid bacteria, promote fermentation quality. Comprehensive assessment, low water content treatment, the concentration of lactic acidbacteria + cellulose(6 + 50 mg/kg) is best, quality highest.
