The circulation and storage temperature is usually controlled in4℃about cold fresh pork, but due to the influence of various factors in the actual sales, it will cause a fluctuation or interruption of the cold storage environment temperature. Although traditional microbiological analysis method is more accurate and reliable, but it is very time consuming, tedious, unpredictable, besides it also cannot provide guidance to the temperature control of the cooling pork industry chain and quality assurance. Therefore, the scientific monitoring cold-chain pork environmental information and the forecast of the shelf life have important guiding significance and it is safe to human body health. It is one of the effective measures to improve the level of product safety monitoring to apply forecasting microbiology, hyperspectral and computer to establish the shelf life of the forecasting model. This thesis mainly analyzes the cooling pork to the variation of microbial numbers over time, to develop cooling pork shelf life prediction model, and develop cooled pork in the process of production, circulation and marketing quality and shelf life of the real-time monitoring and prediction system.The concrete research content and the results are as follows:(1) through the analysis of total number of bacteria in cooling pork at0,4,7,10,15and20℃in aerobic storage conditions, use the analysis of predictive microbiology method, selecting the modified Gompertz model, the modified Logistic model and the Baranyi model as the first level model, the square root model as secondary model, set up of the total aerobic bacteria in cooling pork growth dynamics model, the shelf life calculated by the time of the total number of aerobic bacteria from the initial bacteria number (No) to minimum corruption bacteria (Ns) required to predict the proliferation of time.(2) application of hyperspectral technology analysis cooling pork total number of bacteria and the change of the spectral curve. Study on the feasibility of the prediction model based on all the bands and under the characteristics of band, contrast different modeling methods established by the precision of the model.Research shows that in4, 20℃constant temperature conditions, aerobic bacterial count have a good relationship with spectral curve. Application of hyperspectral technology under4℃and20℃which can test the total number of bacteria fast and nondestructive in the meat is feasible, and can obtain satisfactory prediction accuracy.(3)aimed to adopt RS-485bus technology, set up a set of cooling pork environmental monitoring and prediction system in a timely manner. From the information collection module, display module, communication interface and control interface design based on RS-485communication monitoring terminal. The management application software applied the B/S architecture based on the VB.NET, combined the technology of database management system, which can realize the cooling pork environmental information of intelligent detection and shelf life prediction.
