The source text(ST) is Chapter One of Should We Eat Meat?Evolution and Consequences of Modern Carnivory written by Vaclav Smil who is a well-known Professor Emeritus in the department of Environment at the University of Manitoba in Canada. The ST provides plenty of objective and correct statistical data about food nutrition and meat and it will not only make a contribution to relative further researches, but also help people cultivate a well-balanced diet. The ST mainly talks about meat in nutrition, referring to a lot of professional knowledge about food nutrition, the related medical science, and so on. Under the guidance of Skopos theory and with the realization of differences between English and Chinese, the translator finished the translation with translation skills, such as, division, amplification and omission. The whole translation project report contains five parts: Part 1 gives a brief introduction to the translation project, followed by the analysis of ST in part 2. Part 3 refers to translation theories. Part 4, the most important one analyzes technical terms in nutriology, long and difficult sentences and translation skills. Finally, it makes a conclusion in part 5.
