Wine Quality: Tasting and Selection, written by the author Keith Grainger, is a book about the wine quality, and this book mainly introduces how to taste and select wine. The original text is an informative text which uses formal language with professional, so the translation has practicality.This paper mainly introduces the problems in the English-Chinese translation process of the original text, as well as problem analysis and problem solution. In this paper, the three principles of Skopos Theory is the theoretical guidance, and the adaptive translation strategies were put forward under the relevant principle, which helps to analyze the typical cases. There are 5 parts in this report: Introduction, Analysis of the Source Text, Translation theory, Difficulties in Translation and Solutions, Conclusion. The cases were divided into two aspects: the lexical level and the syntactic level. In the aspect of lexical level,it uses transliteration, literal translation, lexical equivalent translation skills, and in the aspect of syntactic level,it uses voice changes, inversion and conversion methods.
