According to the safety situation of how consumers view the food and beverage industry conducted a questionnaire survey,the aim is to understand the overall evaluation of the status of the consumer food service safety,through data processing,analysis of the current understanding of consumer food safety generally,for education and guidance,to enhance consumer awareness of food safety and the resolution,summed up the safety of consumers the field of consciousness not appropriate,combined with expert interviews,find consumer cognition errors,and give positive suggestions.Through data analysis,food safety grade hotel logo(smiley logo)and hotel employees are posted "health card",in the hotel after eating the body without any discomfort,the hotel the sources of the raw materials of the three judgment of catering service place security and not important indicators,neglected by the majority of consumers.Through the analysis found the following characteristics: consumers for non edible oil into the table of most concern,on imported food safety problems to worry about at least;the consumer excessive use of additives for the food processing sectors most attention,and food safety problems in the hotel did not cause enough attention by consumers;consumers are very concerned about the health and safety of mobile stalls;consumers generally believe that their knowledge of food less,if there is a chance,I hope to participate in various activities,increase the knowledge of food safety,improve the level of awareness;expert lectures,food safety knowledge popularization and the government's announcement should be the most scientific,the most authoritative source of information on food safety,but only a handful of consumers to know to.By using the analytic hierarchy process analysis can be seen: the key to ensure food safety in the food service industry practitioners to improve their own quality,self-discipline and self-reliance;the key role of supervision and management departments should play the supervision,management,encouragement,to disrupt the industry an evil member of the herd,must be punished;consumers should pay attention to food safety information.Rich knowledge of food safety,enhance awareness of rights,health protection,protection of rights and interests are not infringed,and promote the healthy development of the catering industry.With expert interviews,find consumers know the wrong side dishes: no foreign matter,no smell,clean tableware not safety;rights awareness is not strong;the food safety classification label,"health card" is not paid attention to;don't recognize the harm food stored improperly;does not recognize the safety of aquatic products.The consumers are most concerned about the problem,for different consumer groups to determine food service establishments food safety status of significant differences,for how to choose a safe food service establishments,were given a scientific and objective advice.
