| Food is the paramount necessity of the people,the leisure ofall things,and the biggest of all.In fact,food safety has become a universal concern of common topic.The often appeared food safety crisis has made people always focus on the daily necessities.In the past,Chinese people have been emphasising the color,aroma and taste of food,now safety is the first concern for consumers.Without food safety,countries will be restless.From the stability of the country,and from the perspective of the life and health of the people,food and beverage service safety as the last chain in the food supply,it must be safe.This research is based on the background of above.By literature reading,social investigation and empirical study on the current basic situation of Yongshan county food service industry showed that: 95.43% catering service of Yongshan county are small restaurants,snacks,and canteen;41.73% of the food and beverage service practitioners hold a valid "catering service permit license";33.40% of practitioners have a valid health certificate,46.10% have a training certificate;random survey statistics of 601 practitioners in 316 catering service business showed that 47.09% practitioners had junior high school education,41.93% are illiterate or had only primary school education.To conduct investigation and study on food safety situation of Yongshan County catering service is mainly to acquire interviewees' attitude toward food safety problems and security awareness.Results showed that about 3.12% of the 2754 respondents are "very satisfied",respectively,15.68%,66.73%,12.44%,2.03%,are "satisfied","general","not satisfied","very dissatisfied" as regard to food safety situation of Yongshan County's catering service.62.07% of respondents said they have "confidence" for food safety situation of Yongshan County catering service in the future,28.30% of respondents said "I don't know",9.63% of respondents said "no confidence";39.63% will pay attention to the catering service permit and health certificate when dining,27.31% "not",3.06% is "not considered";as many as 60.51% respondents turned a blind eye to illegal behavior during food and beverage service process;19.37%(15.41% with college degree or above)know catering services food safety quantitative classification management,80.63% "don't know".Supervising actuality investigation on food safety situation of Yongshan County catering service concluded that: 2754 respondents,39.07% thought the related government department scores "general" toward food safety supervision and management of food and beverage service,32.73% think "not enough",12.81% think " enough",15.39% "don't know".On the basis of the statistical analysis of the collected data,using qualitative analysis and quantitative analysis,inductive deductive method,in-depth analyze catering service regulation problems of Yongshan County(common regulation problems all over the country and unique problems of Yongshan County).In view of the problems and causes found in the study,by using the experience of domestic and abroad,and excellent regulation in the province,using the HACCP and food safety management related theory,combined with the current requirement of the CPC central committee and the state council and deepen the reform of food safety supervision of Yunnan provincial government,under the condition of Yongshan County,combined with 59.11% of respondents believe that "the government should strengthen supervision,intensify punishment" is the most effective guarantee for food safety of Yongshan County,and about 80% of respondents hope retain vendors meal snacks while strengthen regulation.From strategic framework,long-term governance,detailed implementation,risk control and regulation of the third party,put forward the Yongshan County food service safety regulatory Suggestions and countermeasures,in order to promote Yongshan County food service and safety supervision efficiency,to provide reference for food safety regulation of the frontier minority areas catering services. |
