The significant difference in data between pork production and consumption has become quite a challenge that is puzzling the industry management departments in decision-making.This kind of negligible difference on one hand,is due to the perishable nature of meat product during the process of circulation,and on the other hand,it is because of the discrepancy of pork consumption and production unit,from which carcass weight is the measure of production,while the measure of consumption are all kinds of pork products which could be purchased in the market.In order to solve the problems of the statistical scope between pork production and consumption,we calculate the wastage in pork circulation and the increment of edible part except carcass through field research,and master the change of pork products in large and medium-sized cities from the abattoir to consumers.Then we clarify the relationship between pork production and domestic consumption,consumption statistics of statistical bureau and survey data,domestic effective supply and actual consumption,study and determine the relation of the supply and demand of domestic pork products at present and future period.We analyze the methods in calculating the meat balance sheet of the United States and Japan in order to develop our own based on the research data.This research makes a comparative analysis of pork balance sheet among three countries,and by comparing the similarities and differences,we can find out the competitiveness of pork supply and demand level in China internationally.The findings of this paper are listed as follows: domestic pork circulation loss mainly exist in five processes of pre-cooling,segmentation,frozen storage,transportation,and retail,from which retail trade loss is the largest part.According to the calculation of three products(chilling fresh pork,hot fresh pork and frozen meat)in resident real consumption accounted,domestic pork comprehensive circulation loss has a ratio of 4.36%.Currently,Domestic whole edible pork has a ratio of 90.29%.In 2013,Annual average pork effective supply quantity was 35.4 kilogram in China,and annual average pork consumption was 31.3 kilogram.Annual average pork intake quantity was 27.4 kilogram.So we may safely draw the conclusion that domestic effective supply quantity in china can meet the residents of pork consumption and intake.In 2015,Domestic supply amount of pork is 53.34 million tons and domestic effective pork supply amount is 48.16 million tons in 2015.In China,Pork annual per capita supply is 38.9 kilograms and annual per capita effective supply is 35.1 kilograms according to the population in the middle of 2015.Calories,protein,and fat that pork products can provide is 429 kilocalories,11.8 grams and 42.4 grams respectively.In conclusion,according to the pork balance sheet of China by using the calculation method of Japan pork balance sheet,the supply level of pork production in China remain a relatively high point compare to Japan and USA.There are few strategic recommendations we'd like to propose based on conclusions above.Firstly,the government should uniform meat statistics.secondly,it is important to strengthen publicity the science knowledge of chilled pork in order to increase consumption demand.;and finally,it's necessary to establish a data acquisition system of the loss in meat industry chain and edible parts.
