This experiment was conducted to determine the nutrient compositions and characteristics in vitro of wheat flour from the four modules of general nutrient,pure nutrient,anti-nutritional factors and physical characteristics,and evaluate of the biological titer of wheat flour in vivo,to establish prediction model for metabolic energy and ileal amino acid digestibility of broilers by stepwise regression analysis from the nutrient compositions and characteristics of wheat flour.Experiment 1 was conducted to measure the contents of CP,NDF,ADF,hemicellulose,water,EE,ash,GE,P,amylose,amylopectin,amino acid,pentosan,bulk density and diaspora for wheat flour with 5 pulverized rates(60%,70%,80%,90%,95%).The median or variation range of the main index content were CP 13.16%,NDF 2.48%~6.63%,ADF 0.63%~1.76%,water 10.55%,EE 3.55%,Ash 1.24%,GE 16.34 MJ/kg,P 1.06%~2.41%,amylose 17.73%,amylopectin 45.15%,Lys 0.304%,Met 0.115%,pentosan 2.80%,bulk density 534.48 g/L and diaspora 44.78°.Results showed that,the CP,NDF,hemicellulose and P of flour are positively correlated with the pulverized rate,the correlation coefficient was 0.944(P<0.05),0.911(P<0.05),0.914(P<0.05),0.925(P<0.05).The Asp of flour are positively correlated with the pulverized rate,the correlation coefficient was 0.884(P<0.05).To sum up,wheat flour is a kind of high quality energy feed raw material which can be used for livestock and poultry feed coordination.The pulverized rate is the main influencing factor of nutritional components such as CP,amino acid,cellulose and P in wheat flour.In experiment 2,Single factor test design was used.Four hundred and eighty AA white feather broilers were randomly divided into 6 groups,with 8 replications per group and 10birds per replication.5 groups was wheat flour diet with different pulverized rates,the other group was nitrogen free diet.All collect method was used to measure AME and AMEn for brilers of wheat flour.Ileal digesta method was used to measure AID and SID for brilers of flour.The prediction equations of nutrient metabolism were constructed according to the test results.There was a significant correlation between AME and CP,Ash,P and amylopectin in11~13 day broilers and the correlation coefficients were 0.895(P<0.05),0.885(P<0.05),0.925(P<0.01),-0.881(P<0.05);AMEn was correlated with CP,Ash,P,amylopectin,the correlation coefficients were 0.892(P<0.05),0.883(P<0.05),0.937(P<0.05),-0.886(P<0.05),0.922(P<0.05);AME and AMEn of 25~27 day broilers and amylopectin showed significant negative correlation,the correlation coefficient were-0.959(P<0.01)and-0.961(P<0.01).Two days of AME and AMEn decreased with the increasing pulverized rate,AID and SID were increased first and then decreased.The results showed that the best prediction equations for AME and AMEn of 11~13 day and 25~27 day broilers were AMEn=1.139+1.250CP-50.595Cys(R~2=0.999,P<0.01)andAMEn=37.649-0.422Amylopectin-2.216Glu(R~2=0.999,P<0.01).The best prediction equations of standard Met digestibility for 25~27 day broilers was Y=55.473+146.700Tyr-103.946Cys(R~2=0.990,P<0.01).The prediction equation of metabolizable energy and Met digestibility for wheat flour obtained by this experiment can be used to evaluate it's biological potency.
