Garlic bulbs are vegetable with high contents of allicin,selenium and germanium.In this study,we collected and surveyed 58 garlic cultivars from the main production areas in China and determined five garlic quality indexes including allicin,selenium and barium,soluble sugar and soluble protein were.Through the significance analysis of the five indexes,this study carried on the discussion in terms of producing areas and cultivation methods.The main results are as follows: 1.The contents of allicin,selenium,germanium,soluble protein and soluble sugar in different cultivars are different.It is possible to obtain high content of allicin,selenium,and germanium in garlic,with the germanium content more than ten times that of selenium,by screening the producing area and cultivar.2.In the northwestern producing areas,the allicin content in Shan03 is the highest,and the contents of allicin and selenium in three varietiesShan01,Shan02,and Shan03 in Shaanxi Guanzhong are relatively high.In Gansu,The contents of allicin and selenium in Gan01,Gan02,Gan03,Gan04,Gan05,and Gan06 were relatively low,but the germanium content was at the top in the northwest producing area.In Qinghai and Xinjiang,with the exception of Xin04,the content of soluble sugar was higher than other cultivars.The highest value of allicin in North China is 3.19 g/kg,which is 17 times that of Yu07,of which the content is the lowest.Among the five cultivars with the highest content of selenium,four cultivars came from the producing area in Qixian Henan except for Jin01.Besides,among the five producing areas with the highest content of germanium,two were from Jiangsu Province and two were from Henan Qixian except for Jin01.Since the garlic cultivars in the northeast,southwest,and South China are all purple skin garlic,the content of allicin is generally higher.Among the 13 varieties,the average allicin content of 10 cultivars is higher than that of 58 garlic cultivars which was 1.26 g/kg.The content of allicin in four varieties within the northeastern producing areas is lowest,and the highest content are Chuan01 and Chuan02,two cultivars in Pengzhou,Sichuan.The three cultivars with the highest content of selenium are Gui01,Gui02 and Gui03.Among the five cultivars with the highest content of germanium,Gui01,Gui02 and Gui03 were in the 2nd,1st and 4th places respectively,and ranked 3rd,2nd and 4th as to soluble sugar content.In terms of soluble sugar content,Zang01 is the highest,which is 2.7 times that of Gui04 with the lowest content.As to soluble protein content,Zang01 is the lowest,which is 42% of Gui04 with the highest content.So it can be inferred that the content of selenium and germanium in garlic is closely related to the content level of selenium and germanium in the site environment.3.The contents of allicin,selenium and soluble sugars increased significantly with the content of selenium remained unchanged after Lu04 was introduced into Yining,Xinjiang;The content of allicin,selenium and soluble sugars decreased significantly with the content of germanium and soluble protein increased significantly after Ledu red was introduced into Linyi,Gansu Province;The contents of selenium and soluble sugar increased significantly after the introduction of chuan01 to Lanling,Shandong and Bozhou,Anhui;The allicin content decreased with germanium content increased after Hei01 was introduced from Heilongjiang Province to Liaoning Province;The allicin content increased significantly with content of selenium decreased significantly after the introduction of Xin01 to Jimusar and Ledu of Qinghai;The content of selenium and soluble protein increased with content of germanium and soluble sugar decreased after introduced of Ji02 into Henan Linying.4.There are also significant differences in the five nutrition indexs with the same producing area grown by different farmers,which indicates that under the same altitude,climate,the same variety and the same previous crop,the cultivation density,soil water content,soil texture,harvest time Whether it is extended,etc.,may affect these five quality indicators of garlic bulbs.
