In the modern time,with the wide spread of A Bite of China,Chinese food culture is paid more attention by people from all over the world.Being influenced by this,series of cuisine books with the name of “A Bite of XXX” came out one by one,such as A Bite of Chongqing,A Bite of Gannan,A Bite of the northeast of China and so on.By literature review,the author finds that studies on the translation of the southern cuisine have been developed better,but that on the northeastern cuisine are rather less.It can clearly be seen that more studies on this area are expected.In view of this,Harbin International Travel Agency organizes a professional translation team to translate A Bite of the Northeast of China.In this way,it can standardize the translation of “the cuisine of the northeast of China” and promote the development of the travelling industry in this area.Entrusted by this travel agency,the author is responsible for the the translation of the third chapter,which includes ten topics.Basing on the theories of Text Analysis and Hu Gengshen's Adaptation and Selection Theory,the author explores the characteristics and translation techniques of the text on Chinese cuisine.First,the author analyzes the inner and outer elements of the text,and then applies the Adaptation and Selection Theory to study the translation techniques from two aspects,namely the dish name and the sentence.As for the culture-carrying words,the author summarizes several kinds of methods such as literal translation,literal translation with notes,free translation,transliteration,transliteration with notes and so on.As for the sentence translation,the author tries to make adaptation to the object readers,the language habits of source text and target text and the ecological environment,and then summarizes the following techniques: addition,reduction,sequence adjustment and the transform of part of speech.This translation text can not only provide materials for foreign propaganda which is helpful for establishing the district brand of the northeastern cuisine,but also provide reference for foreign travelers who are willing to learn the cuisine culture of the northeast of China.What's more,through this translation practice,the author has summarized many techniques and strategies for Chinese cuisine translation,which are expected to provide reference for the relevant studies on this area.
