Under the background of economic globalization and educational internationalization,higher education in China is facing a fierce competitive environment.Colleges and universities need to achieve higher talent training objectives.With the rapid development of hotel industry in China,the requirement of hotel talents training is constantly improving.As a new specialty,Hotel Management Specialty in Colleges and universities in China has a large scale after recent years,development.More and more colleges and universities have opened hotel management specialty.Practice teaching is the hard core of hotel management specialty.Practice teaching is an important part of the teaching system of hotel specialty,and it is related to the quality of Education of hotel management specialty and the future development of students.The aim of training hotel management specialty is to train professionals with both solid theoretical basis and comprehensive competence.Practical teaching is particularly important in testing theoretical knowledge,cultivating students' reativity,action and professional quality.At present,the hotel management specialty has not formed a perfect and mature practical teaching system.There are great difficulties in the hardware facilities of practical teaching in this major.At present,most colleges and universities offering hotel management specialty do not have a perfect evaluation system of practice teaching.Therefore,it is very important to establish a perfect and reasonable evaluation system of practice teaching for improving teaching quality and strengthening training characteristics of hotel management specialty in Colleges and universities.In this study,CIPP evaluation model is used to construct the index system of practical teaching of hotel management specialty.Delphi expert consultation method is used to further modify and screen the index system,and the index system of practical teaching evaluation of hotel management specialty in Colleges and universities is established.Secondly,the weight of each evaluation index is calculated by analytic hierarchy process(AHP),the combination weight of each evaluation index is obtained,and the evaluation system of hotel management specialty is established,so as to make a reasonable evaluation of practical teaching.Finally,according to the established index system,the questionnaire of hotel management specialty in Colleges and universities is compiled.I apply the evaluation system to the hotel management specialty in Liaoning Province.By sending questionnaires to the undergraduate students of hotel management specialty in Liaoning Province,the quality of practical teaching of hotel management specialty in Liaoning Province is investigated,and the data are analyzed and counted.The problels and reasons of practical teaching are analyzed,and the countermeasures and suggestions to guarantee and improve the quality of practical teaching are put forward.The evaluation system constructed in this paper is applied to colleges and universities offering hotel management specialty,and plays the functions of supervision,guidance and decision-making in the process of practical teaching.It provides reference for the improvement of practical teaching management and quality of practical teaching of hotel management specialty in Colleges and universities.
