With the rapid development of society economy,people's demand for fresh pork is increasing day by day.The fresh pork is a kind of fresh food,and has the characteristics of multiple production links,long production cycle and easy to rot and deterioration,and the quality and safety problems of the fresh pork are repeated.Actively researching the quality and safety control method of fresh pork suitable for the basic national conditions of our country to ensure the quality and safety of fresh pork from the breeding link to the sales link is an important measure to further protect the health of the people.It is of great theoretical and practical significance to study the quality and safety control of fresh pork.The quality and safety control of fresh pork is systematically studied by studying the research status of fresh pork quality and safety at home and abroad,and according to the relevant theories and methods of fresh pork quality and safety.Analyze the current situation and existing problems of fresh pork quality and safety in breeding,slaughtering and processing,storage and transportation,and sales.According to the selection principle of the evaluation index of the factors affecting the quality and safety of fresh pork,the subjective and objective factors of each link are selected.Divide these factors into two levels,the refined 23 factors are used as evaluation indicators,and the quantitative relationship between these factors is determined by experts grading method.According to the selected indicators,the DEMATEL evaluation model of the factors affecting the quality and safety of fresh pork is constructed.First,the quantitative relationship of these indicators is initialized todirect influence matrix.Then,the direct influence matrix is converted into the comprehensive influence matrix through calculation.Finally,by synthesizing the data in the influence matrix,we can get the cause degree,center degree and etc.of 23 factors,and find out the key factors that affect the quality and safety of fresh pork in breeding,slaughtering and processing,storage and transportation,and sales.On this basis,the flow chart of quality and safety control of fersh pork in breeding,slaughtering and processing,storage and transportation,and sales are constructed.And use VENSIM to analyze the causality between the key factors affecting the quality and safety of fresh pork.The key factors that affect the quality and safety of fresh pork are controlled in breeding,slaughtering and processing,storage and transportation,and sales to ensure the quality and safety of fresh pork to the greatest extent.
