In the era of increasingly fierce competition in the catering industry,the development of catering enterprises must strengthen the management ability of employees internally and the ability of employees to serve consumers externally.Therefore,it is particularly important for catering enterprises to introduce and continuously optimize the performance management system of service personnel.Through the research of this paper,it is of practical significance to guide L restaurant to make scientific and reasonable decision-making of service personnel performance management optimization;and the methods and research thinking process put forward in the research can also provide theoretical reference and reference for similar enterprises to improve their employee performance management system.This paper takes L restaurant as the empirical research object,summarizes and analyzes the main problems in the performance management of its service personnel,and focuses on the current situation,achievements,existing problems and reasons of the performance management of L restaurant service personnel,and puts forward the countermeasures by using the methods of literature analysis,questionnaire survey and case analysis.The main contents of this paper are as follows:Chapter one,introduction.This part analyzes the research background,significance,methods and ideas,and summarizes the literature related to the research,so as to provide the foreshadowing for the follow-up discussion.The second chapter,related concepts and basic theories.This part expounds the theory and concept related to the research content of "employee performance management".The third chapter is the analysis of the reasons for the current situation of performance management of L restaurant service personnel.This part studies from the aspects of L restaurant overview,human resource inventory,performance management issues and cause analysis.The fourth chapter,L restaurant service personnel performance management optimization program design.This paper mainly focuses on the optimization of the performance management system of hotel service personnel and the improvement of the implementation system of performance management.Chapter five,L restaurant service personnel performance management optimization guarantee and effect.This part mainly discusses the L restaurant service personnel performance management optimization safeguard measures and the related measures implementation effect.The conclusions are as follows;firstly,through the questionnaire survey,the respondents'evaluation score is around 3 points,which shows that the respondents are generally satisfied with the current performance management system.Secondly,the problems of performance management of L restaurant service personnel include:the design of performance management index system is out of strategy,the implementation of performance management is not in place,the dynamic planning of performance management is missing,and the incentive function of performance management is not fully played;the causes of performance management problems of L restaurant service personnel are:the importance of performance management is not fully understood,and the supervision mechanism of performance management implementation is not enough System is not perfect,lack of professional high-quality performance management personnel,performance management reward and punishment mechanism is not perfect.Thirdly,to further optimize the performance management system of L restaurant service personnel,the first thing is to optimize and improve its performance evaluation index system and implementation system,ensure the effective operation of the performance management system,and optimize the dynamic system of performance management by PDCA cycle.Finally,L restaurant reconstructs the performance management system of service personnel,which improves the scientificity,effectiveness and pertinence of L restaurant's performance management of service personnel;through the implementation of performance management,L restaurant's service personnel's sense of gain,actual income and work will are significantly improved,which strengthens the recognition of work.At present,there are still some deficiencies in the research of this paper,such as data analysis,research comprehensiveness,feasibility verification of the application of countermeasures and so on.
