| In this paper,based on the detailed analysis about the present situation of fish sourcing in the Restaurant of Lier in WeiXian,the key of research focuses on improving fish purchasing strategy in the restaurant.The aim is to reduce the purchasing cost and improve the service level by improving the purchasing strategy.First of all,combined with the relevant theory of purchasing management,analyzes the present situation of fish sourcing in the restaurant,and points out the problems in the purchasing process.Including:without using the scientific demand forecasting methods,can’t accurate predict the fish demand in the restaurant;have not etteffectively developed the suppliers,lack of management on supplier performance evaluation and cooperative relations,causing the suppliers monopolize the local market and raise the supply price;lack of mechanism to control the risk of running out of stock,out of stock phenomenon serious in the restaurant.Secondly,in view of the problems in the process of purchasing management,put forward the corresponding purchasing strategy improvement scheme:exponential smoothing method is used to forecast the demand of fish;improve the supplier management system,including the improvement of supplier development process,set up the supplier performance evaluation system,carry on the classifying management to the suppliers and establish the cooperative relationship with the suppliers;through the establishment of reasonable inventory,decentralize procurement path and share information with suppliers three ways to control the risk of supply disruptions.Finally,the improved scheme is carried out in the restaurant.through the effective recovery of the application resut data,confirmed the feasibility and validity of the improved purchasing strategy in the process of practical application. |
