Affected by the sudden outbreak of new coronavirus pneumonia in 2020,the catering industry shrank by 15.4% in that year,which was severely impacted.In order to study the management of catering projects in the period of normalization of epidemic control and control,discuss the impact of the "new crown epidemic" on the catering industry,and provide ideas for the development strategy of catering projects in the period of normalization of epidemic control and control,so as to help catering enterprises get rid of the epidemic crisis and seize the market opportunity.This paper combines strategic management theory and SWOT-AHP analysis method to conduct an empirical analysis on the development of "Gan One Cuisine " catering project,in which strategic management theory is used to propose countermeasures and point out the direction for future management strategies of catering projects;SWOT-AHP analysis method uses for quantitative analysis,the analysis results are more objective and realistic.The research results show that the strategic positioning of the " Gan One Cuisine " catering project is located in the first quadrant and in the(0,45°)area,the development decision intensity coefficientρ=0.9561>0.5,and an active "exploitation strategy" should be adopted.In the countermeasures of the "pioneering strategy",the order of importance of the four strategic countermeasures is as follows: first,dig deep into the connotation of "new Gan cuisine",and launch products that combine traditional Gan cuisine with healthy diet.The importance is 0.3746,the most important;Second,seize the development opportunity and create a "New Gan Cuisine" catering and tourism featured high-quality project,with an importance of 0.2737;Third,extract marketing points from the "New Gan cuisine" culture to create a hot spot,with an importance of0.0832;Fourth,make use of the location conditions of the project to vigorously develop the surrounding tourist market,with an importance of 0.2685.On the one hand,the research on catering project development in this paper broadens the breadth of SWOT-AHP analysis method in management research and enriches the theoretical research results of catering;It has certain theoretical and practical significance to provide reference suggestions for the development of Jiangxi’s cultural tourism industry and the promotion and future development of "New Gan Cuisine".
