Along with the economic globalization step quickly, the food safety is becoming the most serious problem in the food production and circulate nowadays. Implement of the quality control system with the core of food safety has already become the focus of all countries government, the business enterprise field and the academic circles. The Hazard Analysis and Critical Control Points (HACCP) system is a logical, scientific approach to controlling hazards in meat production. HACCP is a preventive system for assuring the safe production of food products. The application of HACCP is based on technical and scientific principles that assure food safety. The advanced experience of HACCP has the very important meaning to the continuable development of our livestock farming industry.This research takes SanHuang chickens as the experiment animal. Through establish the control system of HACCP and stipulate for Guide For The Raising And Management Of Harmless Meat Chicken, we applied the HACCP control system to the raising and management of SanHuang chickens. Performance and production quality were measured and compared between those two treatments of HACCP system and one control group. On the other hand, water quality and air quality has been compared between treated and control group.The result suggest that the growth rate and liveability of the two groups treated with HACCP are significantly higher than those of the control group (P<0.05 ) but the feed convert rate has not significant difference between those groups. After the application of HACCP system, all targets of meat quality reached the country's standard. And many targets has very significant difference between the treated group and the control group (P<0.01). Water quality and air quality in HACCP controlled chicken house are superior to the non-HACCP controlled house.The layout and structure of chicken house, the selection of chickling, the treatment of waste, the control of medical rudiment, the immune procedure, the disinfection of chicken house and the air and water condition are the most important critical control points (CCPs) in our research. The Guide For The Raising And Management Of Harmless Meat Chicken we made and all those CCPs are easy to be grasped and expanded. It is useful to the harmless meat chicken production. This research will provide some reference to the Expansion and application of HACCP in the meat chicken production in our country.
