| With the development of Chinese economy and the strategic adjustment of Chinese economic structure, modern restaurants, as one of the three backbones of touring trade which is called the rising sun industry in China, play an increasingly important role in national economy. In the new stage, especially with Chinese entry of WTO, restaurants as well as the other third industries are all confronted with new opportunities and challenges. With the swift development of restaurants trade, the competitions in this trade are becoming intense. The competitions among restaurants embody more and more the competitions of talented persons and the entire qualities of staff. And actually the competitions show the contest of manpower capital. The managers of modern restaurants are hard pressed with the high ratio of the drain of talented persons. It is now an undisputed fact that Chinese touring trade is faced with severe resource crisis of talented persons. Talented persons are"root"of modern touring restaurants. If the root can not be carefully kept or not be taken good care of, profits and development can only become a castle in the air. The high ratio of the drain of staff results in not only the drain of skill and experience, which influences the regular movement of restaurants, but also directly threatens the survival and development of restaurants. Therefore how to accelerate the orderly flowage of staff, how to avoid the drain of talented persons, and how to keep the valuable staff so as to realize the optimum collocation of manpower capital and to obtain the maximum efficiency become the keys to competition superiority and continual development.The thesis proceeds with the general theory of the analysis of manpower capital flowage. Based on the practical investigation of Tianjin XD Hotel ,it mainly analyses the status quo, characteristics, rules, and trends of the staff flowage in touring restaurants. It gives an analysis of the drain of talented persons from three angles, i.e. society, individual, and organization. It evaluates the possible influence and aftereffect which are caused by the drain, and puts forward the measures to prevent and control the drain, i.e. to exploit crisis management system based on the drain, to form a management mechanism and culture, to enhance the attraction of restaurants, to perfect the mechanism of restriction and control, and to exert the talented persons'benefit to the utmost in order to guarantee the survival and development of restaurants and their staff and to attain the double-win at last. |
