Along with the increasingly raising of the people living level, it is a widespread mindset for the consumer, both at home and abroad, to buy superior quality and safe pork. The problem not only influences people's health, but also a country's order of pork market and the import and export trade of pork, even people's expectation for the economy and society safety. So, how to guarantee the supply of high quality pork effectively is the key problem that relates to people's life, social stability and competitive power of nation pork. However, recently, in China, the quality problem of pork makes the consumers feel discomfort more and more. So we must build the green supply chain of pork industry of China with the advanced the green supply chain theory of the world combining with the national conditions of China, with the purpose of promoting the pork producing standardization, improving the quality of pork production and enhancing the competitive power of pork production in the world.Based on the analysis on the present situation of pork market of China, the paper establishes the research subject, constructing the green supply chain of pork of China; through analyzing the related research results of the domestic and foreign scholars and combing with the actuality of China, the paper gives the features of green supply chain of pork and its design principles, and builds the green supply chain of pork of China with a modeling analysis and design method, IDEF model; combining the idea of green production and green pork with the improved operation reference model the paper constructs the operation reference model of green supply chain of pork and analyses the six processes of the model, including green plan, green source, green breeding, green slaughter and processing, green delivery and green return, in detail; the paper researches the design principles for building the evaluation index system of the green degree of green supply chain of pork, and constructs the evaluation index system and the Fuzzy-AHP-Grey evaluation model based on the detailed analysis on the factors that have great impact on the green degree of the whole green supply chain of pork. Finally, the paper gives an empirical study on a large enterprise group of China, thus, the feasibility of the green supply chain of pork of China, the evaluation index system of the green degree of green supply chain of pork and the evaluation model building in the paper is verified.The innovation of the paper is mainly reflected in the following aspects: (1) the paper builds the model of green supply chain of pork using the IDEF methods, and the paper constructs the operation reference model of green supply chain of pork; (2) the paper establishes the evaluation index system of green degree of green supply chain of pork; (3) with the improved AHP, the paper establisnes an evaluation model, Fuzzy-AHP-Grey evaluation mode, for the green degree of green supply chain of pork.Although the paper researches the Constructing, Operating and the evaluation on green degree of green supply chain of pork systematically and deeply, green supply chain of pork is a complex system which involves lots of contents, especially, the researches on the function system, information system and evaluation on performance of the green supply chain of pork are of vital importance for optimizing the overall function of the green supply chain of pork, so the paper should take the further exploration and research in these areas.
