In recent years, dairy quality incidents have happened several times in China. After melamine-containing milk powder incident, the milk produced by Mengniu was examined to contain too much aflatoxin M1, but Mengniu couldn’t trace the problem and give a reasonable explanation. Customers in China are anxious about the dairy products’safety and pay much more attention to the traceability of the dairy products.In the industrial chain perspective,this paper takes dairy quality risk control as research object, and takes the quality safety traceability as a control method, and proposes a systematic view on how to control dairy industrial chain quality risk, that’s by means of establishing quality safety traceability system, based on quality information, according to quality risk evaluation and using quality safety traceability system in time, to conduct the quality safety traceability, dispose of quality risk and share the responsibility reasonably.Firstly, on the basis of analyzing the various links of the dairy industry chain, we classify the dairy industrial chain, identify the all kinds of quality safety risks in the dairy industrial chain, and find out the incentives of quality risks in the traditional industrial chain model. The paper uses the genetic theory of heredity for reference, analyses the genetic process and transfer method along the industrial chain of the dairy industrial chain quality risk gene, and divides the risk flow from the source to end in the industrial chain into four forms.Secondly, by using the questionnaire, the paper finds that quality traceability is one of the factors that affect the purchase decision-making of dairy product. We also illustrate the existence of quality risk by decision tree method. The quality risks can be classified by using the matrix method and be calculated by VaR method. These results can be used as the basis of quality risk control.Thirdly, this paper proposes the implementation method of the dairy industrial chain quality traceability. On the basis of clarifying the general processes and objectives of establishing traceability system, it designs the functions and information of the system in order to meet the demands of the company, customers and the government. The key technologies are introduced and the complaint channels are investigated. It also shows the general process of each subject conducting the quality traceability with an example.At last, we summarize the innovations and weakness of this paper, and look forward to the future development of dairy quality safety control and traceability system.
