With the growth of the national economy, our dairy industry has a rapid development, and our total milk production has reached the world’s fourth level now. Because of high nutritional value, dairy products are favored by consumers. However, dairy products quality and safety incidents have always occurred in recent years, which hit consumer confidence in domestic dairy products, harm companies’ interests of dairy products supply chain, and also affected the healthy development of the dairy industry in our country. How to improve the quality and safety of dairy products management level has become an urgent problem.In order to solve the problems above, this paper adopts the method of game theory to research the incentive and coordination problems among the companies of dairy products in upstream and downstream supply chain.Firstly, this paper establishes an agency model between dairy enterprise and milk station against the dairy products quality problems in upstream supply chain. The research concludes that the result under information asymmetry is worse than the result under information symmetry, but has more practical significance, and then designs a model when dairy enterprise can observe other helpful variables under asymmetric information. After models comparing and numerical simulation, dairy enterprise observable variable model can spur milk station work better is proved. Other conclusions are also got like milk station’s effort level has a positive correlation with market quality-sensitive factor, government grants, and has a negative correlation with milk station’s risk aversion, market uncertainty and his effort cost coefficient. Then, the paper establishes a coordination model between dairy enterprise and retailer against the dairy products quality problems in downstream supply chain. After the comparison of no cooperation and full cooperation model, the paper finds the necessity of cooperation, and then designs a bilateral cooperation model and gets the revenue factor interval that both sides can actively participate in contract cooperation. Further research also shows that consumer quality-sensitive factor, consumer complaint rate and the size of dairy company’s loss caused by consumer advocacy are positively correlated to enhance enterprise’s level of quality control, while the size of dairy enterprise’s quality control cost coefficient is negatively correlated to it.Finally, combines the first few chapters’research, this paper puts forward some quality and safety management recommendations for dairy supply chain form the following perspectives:business, social supervision and government regulation, which makes this paper more realistic guiding significance.
