Since the reform and opening up,China's catering industry have rapidly developed,the number and variety of food and beverage are growing fast.However,the frequent occurrences of food safety accidents expose many problems in catering industry in recent years.Due to wide distribution,huge quantity and low degree of standardization,small-scale catering units become the key point and difficulty in the food safety supervision.Shizhong District of Zaozhuang city in Shandon Province as a typical area with large amount of small catering enterprise,to carry out this investigate on food safety situation and countermeasures for local small catering is of great significance.This thesis investigates problems of food safety of small catering units from Shizhong District of Zaozhuang City via literature research method,comparative study method and field investigation method.Mainly problems include:safety in processing does not meet the requirements,processing operations are not standardized,food safety management system is not perfect,tableware disinfection is not implement thoroughly,the health management of employees is not strict,the purchase invoice is not standardized,ledger records are not standardized and the architectural layout and the process is not reasonable.Secondly,this study suggests that the following problems existed in food safety supervision for catering units,are defective laws and regulations,weak law enforcement,and law enforcement equipment shortage.Besides,poor self-discipline,low comprehensive quality,and deficient food safety concepts also limit their development of catering units under food safety supervision.Finally,after analysis of the problems of food safety and supervision in Shizhong District of Zaozhuang City,some suggestions and countermeasures for improvement food safety supervision have also been proposed,including perfecting laws and regulations,deepening institutional reform,strengthening team building,enhancing the ability to perform their duties,sharing information,developing multidimensional supervision models;strengthening the publicity and training,and creating a social environment;improving the long-term mechanism to consolidate the results of governance,and so on.This research on small catering units in Shizhong District of Zaozhuang City revealed food safety and supervision situation of catering industry,found the problems that limits the developments of small catering units and identified the prime factors,proposed the effective countermeasures,which is of great importance to facilitate food safety supervision,strengthen self-discipline of small catering units,and safeguard people diet health.By a serious of countermeasures implementing,it has had great success in the initial stage of food safety supervision in Shizhong district,Zaozhuang,include greatly reduced catering complaints and food safety accidents,improved food safety awareness of operators,satisfaction of the masses and quality of food safety supervision,besides,illegal behaviors on food safety have been effective prevented.
