In recent years,with the development of economy and society,the increasing demand for tourism has accelerated the upgrading of hotel industry,so the industry threshold of hotel practitioners has been raised.Meanwhile,the quality requirements of hotel guests for hotel practitioners are also increasing,which has put forward higher requirements for the professional teaching of high star hotel operation and management.As a professional core course of the middle-grade high star hotel operation and management profession,"Catering Service and Management" is responsible for the cultivation of catering service talents,and improving the teaching quality of the course,which is conducive to enhancing the quality of the professional talents.Contextual teaching is a common teaching method,and in recent years,contextual teaching has often been applied in vocational education by virtue of its own advantages.However,in the actual teaching process its advantages have not been fully played into,which requires reform and optimization in practice.This study will select a G school in Gui Lin as a case study,the problems of contextual teaching in the teaching practice process.By analyzing the result,the author puts forward specific optimization strategies to better create the teaching in the middle level "Catering Service and Management" course.The study also proposes specific optimisation strategies to better create teaching contexts in the middle-level Catering Service and Management course,bring into play the role of contextual teaching,and improve the application value of contextual teaching,as well as the teaching effect of the middle-level Catering Service and Management course.Moreover,the study also provides reference for other courses to carry out contextual teaching.In the beginning part of the study,the literature analysis method,interview method,questionnaire method and observation method were used to prepare for the investigation and research,mainly by reviewing the literature on contextual teaching,sorting and summarising it,and clarifying the purpose of this investigation.Secondly,the investigation implementation process,focuses on the main content of the investigation,by drawing on the research materials of other scholars,compiling classroom observation forms,student questionnaire and teacher interview outline,and conducting the survey in the target schools,aiming to understand the current situation of contextual teaching of Catering Service and Management at secondary level.In the section of measures and actions,the shortcomings of the implementation of contextual teaching are systematically analysed.Meanwhile,problems in the process of contextual teaching are found in the implementation of contextual teaching by teachers in school G,such as context creation,perception and experience,guidance and understanding,deepening of emotion,and evaluation of contextual teaching.Based on this,targeted optimisation strategies are proposed,an optimisation plan for contextual teaching is designed,and the optimisation plan is tested in practice.The conclusion and outlook section summarises the research on contextual teaching optimisation and the implementation of teaching practice,and presents the shortcomings and future prospects of this study.
