| The main content of the course catering service and management covers the core competence of service and management of grassroots employees in catering enterprises,due to its strong operability and large market demand,it has become a key part of the construction of high-star hotel operation management specialty and tourism management specialty in secondary vocational schools.At the same time,considering that there is still a considerable demand gap for managers engaged in the catering service industry in the current market,hotel enterprises,the catering industry and so on have placed great expectations on the construction and development of the course.Through the retrieval and collation of literature on competitive teaching,differentiated services and vocational education competitions at home and abroad,the teaching theory is based on competency-based theory,constructivist learning theory and the integration of knowledge and practice.Based on the above conditions,this study chooses the students majoring in tourism services in Nanning Sixth Vocational and Technical School as the research object,and applies the teaching mode of differentiated service competition in classroom teaching.The experimental method and questionnaire survey method are used to study the teaching of catering services and management in two classes for four months.This paper analyzes the compatibility of differentiated service competition with enterprise management and service customers,the scientificity of competition teaching objectives and the effectiveness of teaching effect,aiming to solve the following two problems :(1)How to infiltrate the concept,content,evaluation methods and evaluation criteria of enterprise competition into teaching,so as to closely link the teaching content with the specific practice process of enterprises.(2)How to combine the curriculum characteristics of secondary vocational students with the standards of hotels and catering enterprises under the differentiated service competition mode,and play an important role in promoting the teaching quality of tourism service related majors in secondary vocational schools.Based on the related needs of differentiated services,the following five contest teaching contents are proposed : Chinese wedding banquets,tourist group meals,business Western banquets,Japanese and Korean cuisines,and wine bars.Based on the teaching objectives of catering service and management course,the following conclusions are drawn through the research on the application of differentiated service competition model in the course teaching by taking the teachers and managers of catering enterprises in the Ministry of Humanities and Tourism of our university as interview subjects :(1)Competition has a positive role in promoting classroom teaching and can optimize teaching objectives;improving students ’ interest in participating in teachers’ design competition tasks in class has a significant effect on the comprehensive ability of future employment values and career planning;the experimental class teaching effect is better than the control class;the result of interviews with teachers is that teachers generally implement competition teaching in secondary vocational courses,which can improve teaching quality.(2)There are constraints in the implementation of differentiated service competition teaching : one is to increase the workload of teachers in the teaching of catering services and management in secondary vocational schools,to grasp the classroom order and control the orderly implementation of competition teaching,and to grasp the teaching content of the course should be closely related to professional posts;second,the students ’ inadaptability to the beginning of competition teaching requires teachers ’ timely guidance and adjustment of students ’ learning attitude.According to the application analysis in the teaching process of differentiated service competition,this paper puts forward teaching optimization countermeasures:to improve students ’ psychological stress quality in the competition,teachers should construct the curriculum teaching design with national professional standards,skills competition and competition,effectively reduce the difference between teachers ’daily teaching and competition standards,and form the teaching resources system of competition and teaching,so that the long-term accumulation of valuable competition resources and competition development achievements can benefit the majority of teachers and students in vocational colleges. |
