With the rapid development of science and technology in China,food enterprises pay more and more attention to safety production and production quality in production.For a pig slaughtering and processing enterprise,product quality is the foundation of X Food Company’s survival,and product quality depends on production quality management,which involves the core of quality management.How to apply advanced quality management theory to improve the original quality management mode,learn and apply advanced quality management theory and methods to find out the production quality management method suitable for the company,improve the current situation of enterprise production quality management,improve product quality,and improve the core competitiveness of the enterprise is the process of X Food Company’s continuous learning,thinking and improvement.This paper summarizes the research status of production quality management at home and abroad,and determines the research content,methods and ideas based on the current advanced quality management theory system at home and abroad.The main research method adopts the method of combining theory with practice to analyze and improve X Food Company’s production quality management problems,and optimize and improve the design of the causes of quality management problems in the production process.First of all,the current situation of X Food Company’s production quality management is described.Through the profound research and analysis of the current situation of production quality management,the problems in the production process,such as the large number of unqualified products in one repair,microbial control problems,CCP key point control problems,poor quality improvement effect,management quality management problems,etc.,are summarized.Then,the causes of the problems are analyzed in detail.Secondly,in view of the causes of the production quality management problems of X Food Company,the corresponding improvement plans are proposed from several aspects,such as strengthening the one-time dressing qualification rate of products,the prevention and control of microbial pollution,strengthening the quality awareness of key control points,the continuous improvement design based on PDCA quality,and the ability improvement of quality management.Finally,the paper puts forward the guarantee measures from the aspects of strengthening the training of quality management theory,establishing a process quality control mode of full staff and multiple means,continuously improving the human resource management system,and constantly building the awareness of enterprise quality culture.
