Secondary vocational and technical education consists mainly of education provided by secondary specialized schools, technical schools and secondary vocational education, as well as various forms of short-term vocational and technical training. Hotel management major of Secondary vocational technical schools trains attendants and managers with highly integrated professional ability. They are well developed morally, intellectually, physically and aesthetically, can meet the needs of socialist modernization and work in the first-line position. Professional ability refers to the ability of students to engage in some kind of professional activities and can be divided into basic professional vocational ability and comprehensive vocational ability. Each of them consists of professional ability, methods ability and social ability. The ways of professional capacity-building are: curriculum and teaching system, practical training system and evaluation system.. This paper presents the structure, training methods and problems in training of professional ability by analyzing the connotation of professional capacity. To sum up, this paper argues the teachers of vocational schools should train the professional ability of the students majoring in hotel management in order to be able to employment-oriented and for the purpose of the service. This paper also insists that the students of vocational schools should pay attention to their own professional abilities in order to adapt to market economy and meet the needs of the society.
