Calcium, chondroitin sulfate, and collagen has rich nutritional value, which arevery important to the health of human body. Calcium can ensure and maitain normalgrowth and development of bones; chondroitin sulfate can be used as food, medicineand health care products; collagen can help to keep your skin firm and elastic, and which is widely used in food and cosmetic industry. Using the waste fishbone as raw material for the extration test, this article studied on the optimum process conditions of fishbone active ingredient under the semi-bionic circumstances by using high-intensity pulsed electric fields. We have realized the the full utilization of fish resources, and developed the optimum formula of fishbone high calcium compound beverage products and chondroitin sulfate-collagen compound beverage products. The conclusions as follows:1. The study of fish bones uses the method of PEF combined with semi-bionicextraction under the buffer condition(1) According to the relationship of extraction amount between the calcium ions,chondroitin sulfate and collagen can obtain the weighting coefficient by principalcomponent analysis, get the total score equation: Y=0.4413X1+0.3759X2+0.3357X3(2) The extraction of the active ingredient in fish bones under buffer solutionpH2.0,7.5and8.3,using quadratic general rotary unitized design to optimize the teston the basis of single-factor test, can get the simplified mathematical model of theregression equation.Use the nonlinear programming, calculated the optimalcombination of parameters by a factor coding table can achieve the maximum amountof extraction.2. The study of fish bones uses the method of PEF combined with semi-bionicextraction under the condition of biological enzymeThe pepsin and trypsin are main enzymes in human gastric and intestinal, addprotease as a major enzymes in the stomach under pH2.0, add trypsin a majorenzymes in the small intestine under pH7.5,adjusting the pH value of2.0,7.5,8.3respectively, using quadratic general rotary unitized design to optimize the test on the basis of single-factor test, can get the simplified mathematical model of the regressionequation.Use the nonlinear programming, calculated the optimal combination ofparameters by a factor coding table can achieve the maximum amount of extraction.3. The research of fish bone composite beverage products(1)The best recipe for a composite high calcium beverage products which isextracted under pH2.0of enzyme conditions: extract with20%,1%rhodiola,10%sucrose dosage,0.1%citric acid,0.3%propylene glycol alginate.(2)The best recipe for a composite high calcium beverage products which isextracted under pH7.5of enzyme conditions: extract with20%,8%sucrose dosage,0.14%citric acid,0.3%propylene glycol alginate.(3)The best recipe for a composite high calcium beverage products which isextracted under pH8.3of enzyme conditions: extract with20%,10%sucrose dosage,0.20%citric acid,0.3%propylene glycol alginate.(4)The three beverage product have some advantages: clear and transparent,moderate sweet and sour, high concentrations of calcium ions, chondroitin sulfate,collagen. They have a high nutritional value.
