Since Reform and Opening up,international exchanges between China and other countries have increased. As a bridge of friendly exchange and cooperation with the outside world, interpreting activities have developed rapidly in China. In view of the differences between Chinese and English, the timeliness of interpreting, and the diversity and universality of information content,in order to finish interpreting correctly and fluently, the interpreters need to pay attention to the differences between Chinese and English, and choose appropriate interpreting theories and techniques. The Interpretive Theory is an interpreting and translating theory born in France at the end of the 1960 s.The Interpretive Theory emphasizes the process of "de-verbalization" and re-expression.Taking simulated simultaneous interpreting for the 26 th International Conference on Coffee Science cum the 1st Asia Coffee Annual Conference as an example, guided by the Interpretive Theory and some interpreting techniques, the author of this report analyzes and summarizes the whole interpreting process in terms of vocabulary and syntax in this report. This report is divided into five chapters. The first chapter is transcript of the source speech and the interpretation. The second chapter is about background and significance of the simulated conference. The third chapter talks about the process of interpreting, including pre-interpreting,interpreting implementation and post-interpreting.The fourth chapter includes introduction to the Interpretive Theory, some interpreting techniques used by the interpreter during interpreting and cases analysis,in which the interpreter combines theory and interpreting cases to analyze the interpreting process. The last chapter includes summary and reflection. In this chapter, the author introduces some difficult problems and solutions in the simulated interpreting.
